His US persona is aggressive but he has tons of educational content (and also shows with children) where he is patient like this. My opinion is his “brand” was damaged early on by some US editor’s decisions, but maybe we just like a-holes here and it’s our own fault? Anyway I have no idea what he’s like in real life but most of the stuff he’s in it’s like you say. Patient with folks who want to learn. Less patient with people who should know better and claim to be more than they are.

It's pretty understandable too, most people know of him through the show and have this perception that he's a mean strict drill sergeant or something like that but, in addition to it being TV so he's likely playing it up a bit, those people he works with there are supposed to be very much professionals in his own field so the expectation is day and night between people who do it for a living and random people asking cooking questions on twitter. Additionally, I bet he loves giving simple and basic advice because it tells him that people are taking an interest in cooking for themselves, something I'm sure he's a big advocate for because he himself loves cooking.

Ask him to take a look at the cooking in McMurdo Station, Antarctica. Saw a BBC documentary about it, impressive. Part of a whole series. They plan their menus 18 months in advance, everything comes at once, and most of it is officially expired before it even arrives in Antarctica. Fresh bakery very important, small greenhouse allows everyone to have a fresh salad -- once a week.
