His US persona is aggressive but he has tons of educational content (and also shows with children) where he is patient like this. My opinion is his “brand” was damaged early on by some US editor’s decisions, but maybe we just like a-holes here and it’s our own fault? Anyway I have no idea what he’s like in real life but most of the stuff he’s in it’s like you say. Patient with folks who want to learn. Less patient with people who should know better and claim to be more than they are.

he uses sea salt flakes. It always looks like a lot because there are gaps in between the salt flakes. So if you were to buy a 500g package of sea salt flakes, you probably could pour in 1kg of ordinary salt in it.

kosher salt is a thicker grain so a fist full would be to much but i'm pretty sure i saw a cut in there because he realized it was to much and cut up more garlic. After all the clove went from this tiny next to nothing to something that resembled 3-4 cloves.

Santoku isn't a brand but style of knife, and there are western versions, but generally they're a hybrid between a cleaver/chopper and a classic chef style knife. So that guy was asking about the pro's and cons of a santoku style knife vs a chef knife, and they are reasonably substantial.

Ask him to take a look at the cooking in McMurdo Station, Antarctica. Saw a BBC documentary about it, impressive. Part of a whole series. They plan their menus 18 months in advance, everything comes at once, and most of it is officially expired before it even arrives in Antarctica. Fresh bakery very important, small greenhouse allows everyone to have a fresh salad -- once a week.

Right? I never knew to add salt. He actually helped me a ton! Thanks Gordon! You're the best (even though you will likely NEVER see this!)
