Teriyaki sauce is often used to make older meat taste fresher, because of the interaction between the pineapple juice and the proteins in the meat, however cheap/jarred Teriyaki sauce often doesn't even USE pineapple, so the chef or whoever made the dish clearly just used google to make it. Here's another bad thing about mixing anything fish-related with mashed potatoes or any other foodstuff that normally doesn't contain fish: potential allergies. Unless you tell people ahead of time that it contains fish, someone with an allergy could eat it thinking it's okay and get sick, and then the restaurant will be liable for any serious damage sustained. I should note I'm more sensitive to this topic because I have a seafood allergy and have a relative with a different food allergy.

Greek here. I believe what they were trying to attempt at 8:28 with the caviar and potato, is a dip called taramosalata, which is made from cod eggs and starch (potato or bread crumbs). It's supposed to be blended smoothly and is actually quite nice when done properly. Not whatever that was 😬🤣

Gordon is there to help them, he cannot do anything if they lie to him. Plus a vast majority of these owners, misthreat their staffs, don't pay them for extended periods or straight out treat them like shit, so yeah when Gordon ask them questions, they answer thruttfully in the hope that things gets better and that the owners change their ways and open their eyes. Sometimes it works, sometimes it don't, but at least they are faithfull... And if the owners looks bad, its because they are bad, not because of the staff but because of themselfs and their decisions.

I believe the mash potato-salmon roe thing is supposed to be taramasalata. But taramasalata is made from cured salted roe, going from Cod to Grey Mullet. I think the base is usually bread, but I’ve seen places where potatoes are used.
