So, I remember watching this like years ago and feeling the same way as comments do. But the more I’ve experimented with cheeses and grilled cheeses with things in the middle, I’ve realized that the cheeses he used probably aren’t “melting” cheeses. Like yes they would melt after awhile but not really for a grilled cheese. Sharp white cheddar gets very soft in a grilled cheese, it doesn’t really melt. I’m guessing that’s what’s gone on here. It was probably very soft and good cheese, it just wasn’t very melted.
