Makoto Naegi - That's pretty funny, but true as well. I do the same. However, a few times, just a few years back, I decided to grow my own. They would have overtaken my small garden, so I followed the 'guerilla gardening' style, and planted a few here and there, all around town, in forgotten spots of fairly decent soil, often in the woods, near the beach, with as much sun as I could find. Planted late spring, just from the eyes of red, yukon and russetts, that I let go. I didn't fuss (or pay for), seed potatoes. The interesting thing is that I suffered no theft. If they were tomatos or squash of some sort, that people could see the fruit or such above ground, there would have been none left for me, as hundreds, if not thousands of people walked by these odd places that I planted potatoes. Hardly anyone knows what a potato plant looks like, and even if they did, they'd probably just leave it alone, which is what happened in my case. Come fall, I harvested them and they were well worth the effort and wait. I don't know how to describe it, but if not sweeter, than more 'potato-y', than I was used to, from any market. Highly recommended.

I started planting old sprouting potatoes years ago. Now, not only do I not know where they are but whenever I dig the ground to plant something, I find potatoes at various stages of their life.

I love the fact you emphasise the seasonal aspect of produce . The thing that has killed buying fresh produce is consumerism wanting everything all year round. Looking forward to a season creates a balanced diet and an excitement for food.

To be honest, I've never heard of any of the types of potatoes they mention in this video. Here, we have russets, white potatoes, and yellow potatoes. That nokki (sp?) looks super interesting... might try making it sometime. =)

all the varieties of European potatoes are really interesting. You can sometimes find them or similar ones in the US at farmers markets. And gnocchi is great would highly recommend.

In my opinion it's good to boil them in coats, only to wash it good and to salt. But no matter in coats (which would boil slightly longer and you have to slice it) or not, potatoes like thyme, dill, coriander and savory (dried ones must be crushed in the fingers). They also like butter, dried pepper and garlic powder. So it can actually be tasty.

My Morfar ( Moms father) was from Norway. He used to get mad at my Grandma ( a British/ Scottish American) for mashing potatoes. He’d say ruin a PERFECTLY good boiled potato! He’d pinch one or 2 and in Norwegian say “ don’t worry my darlings, I appreciate you.. I’ll save you .” Give Gran a mock dirty look , put them on his plate, put butter, salt and pepper ( sooo much pepper) and say “ THERE!. Now it is in Heaven. Not being mashed to HELL! . Which was followed by a giggle of the children, and an eye roll from Gran. OH I miss them. Now I do that with my husband when he makes mashed potatoes. I always send 1 or 2 to heaven for my Morfar.

I’ve said before and I’ll say it again: respect the spud! That gnocchi recipe looked delicious, and reminded me of my dad’s Spätzle recipe. It’s flour based, but he fries them immediately after, as well. We typically eat it with his homemade pork schnitzel and cover them both with cucumber sauce and wash it all down with a Hefeweizen. 😋 Sehr lecker!

Thank you, Chef Ramsey, for this video. I learned so much. I was so proud when I heard you say start cooking boiled potatoes in cold water, not hot. That's the way my Mom taught me. Her Mom did not teach her to cook so when she married Dad she had to teach herself. Her life's passion was teaching so I'm sure it was no problem for her to learn the basics. Cooked the gnocchi with peas and enjoyed it very much. The thyme and the lemon zest give a sexy twist, which lifts the dish from "good" to "fingerlicking good". But I have a question for the preparation of the gnocchi. Many recipes request, that the potatoes should be as hot as possible for mix in the dough. How do you all think about that?
