I use fresh milled Einkorn for all of my bread, cakes, pasta, etc. Organic einkorn is the only grain I use. People just need to understand that fresh milled grain breads will be more dense than your fluffy white bread but the taste is unparalleled. Although it takes a bit of getting used to, it does hold together just fine. I have even made an angel food cake with it and it was delicious. It has helped heal my body from gluten sensitivities and has helped me lose weight 🥰

Commercial white "bread" is a totally different process than traditional breadmaking.

Do you make sourdough bread with Einkorn? I’m having a difficult time with it. My dough sticks to my hands terribly and my bread doesn’t have much wholes or fluffiness. What am I doing wrong? I follow my recipe exactly with a scale to measure. Thank you!🌸

I've been healing from SIBO and initially I could only digest Einkorn without severe bloat. Red wheat gave me severe gut pain. I've healed a lot in a year and can tolerate some red wheat after 1 year. I just LOVE Einkorn but I use a very broad variety of ancient grains as well as modern. I use nearly 100% Einkorn in my sourdough. It works for me.

That's wonderful! Again, I totally understand that people with gut issues are going to take take to heal. Regardless of what wheat you use, just mill it yourself so it's REAL whole grain wheat. I'm so happy to hear you are healing!

To take care of SIBO you might want to find “Mary’s Nest” & look for video about L Rueturi & super culture yogurt. People give testimonies about being healed after using this yogurt for awhile.

Hi Felicia, I discovered einkorn flour in 2019, as I was searching for sourdough bread. Just so happened to stumble across a video of the late Carla Bertolucci, whom I discovered later that, ghat month would have been her one year anniversary death. I did purchase her book and einkorn jovial flour from various websites on line. And about a year later I also came across a video of Sue Becker. Where it got me to purchase the grain mill and the brewers yeast and some other products from her, including her recipe book a couple of them. I purchased whole berries from grand teton, and I have made quite a purchase from pleasant hill grains. Honestly the whole red wheat berries or white berries are heavy on my digestive system not like the einkorn or kamut and other grains. I have a relative who can't eat whole grains, serious health issues and when I gave him einkorn, he is now enjoying making bread and being able to include it into his diet without having to go into gluten free breads, which I consider a big headache. And I like to mention that I recall my maternal grandmother may she rest in peace, how she used to use the sourdough in order to make bread and that is before the invention or availability of stove top burner. I watched so many sourdough starter videos on how to ... my recently diseased mom, at times it didn't make sense to her. As she made sourdough bread ever since her teen years. I make my sourdough bread with wholegrain berries, because I must consume the purchases I made. And I have come to make the best sourdough starter by not measuring, and I must say sourdough bread without measuring either. And my cousins and relatives enjoy it specially those with gluten sensitivity or intolerance.

My daughter can only do the ancient grains. I tried hard and soft red and white. I was grinding my own and making sourdough. When I switched to using kamut, einkorn and spelt, she got so much better.

I have had digestive and constipation issues all my life, until a month ago when I started milling my own wheat. Not only that I have shed the extra lbs I gained because of reduced physical activity due to health reasons. I actually am starting to feel like my whole body is on the mend. All this thanks to my fellow Albertan, @LifeofBrian, and the videos she recommended featuring Sue Becker of Bread Beckers. Thank you Sue for sharing your knowledge and time and your book, "The Essential Home-Ground Flour Book". Thank you Felicia for sharing the info on Einkorn grain.

I make our pizza dough for Friday nights using (freshly milled) Einkorn flour. I usually use a sourdough recipe, but definitely have great success with the recipe on the package of Jovial all-purpose Einkorn flour which uses active dry yeast. I do usually sift the flour. It is expensive, compared to other grains, so we save it for our favorite pizza dough once a week and maybe a few other things occasionally. Thanks for the great videos!

Professor, that was a great chat. Today, 8/8/23, I wanted an Albacore Tuna sandwich with Duke's Mayonnaise. So, last night, I cooked up 24 ounces of Einkorn Berries in distilled water and got 3 lbs of cooked Einkorn. I combined one can of Albacore with 8 ounces of cooked Einkorn in a bowl and added 1 tbsp horse radish plus 2 tbsp mayonnaise and mixed. Then added red salt, black pepper, parsley and Mrs. Dash. Mix again. The Einkorn was in the refrigerator overnight. I fed my wife and I 8 ounces of Einkorn with the tuna. It was indeed delicious and nutrition packed. Keep up the great work. KZbin is a tough way to make money intil you figure the whole thing out. Music is unnecessary but if you do, play it soft. Facts are good!

So what I'm learning here is that this "ancient" grain that we are being told has NOT changed since ancient times (thus the term "ancient grain") is in fact NOT an ancient grain. It is a hybrid. I'm so confused with the world I live in. I just have a hard time believing anything anymore.

Also missed one of the cost components, which is that einkorn is less prolific and the hulls are more difficult to remove, thus also increasing the cost.

I absolutely love the taste of Einkorn, but it’s so hard to work with. I mill my Einkorn berries myself and I do have Carla’s cookbooks. Working with fresh milled flour is much different than working with store bought flour. I purchased my Bosch mixer from Pleasant Hill and I’m looking forward to buying my berries from them! I’m looking forward to learning more about it and perhaps stepping up my flavor game!

Einkorn is more expensive because it has the lowest yield per acre of any type of grain and the individual grains small in comparison to spelt or emmer. I use einkorn for all the breakfast things! Until this past week, Jovial carried the berries in 10 pound bags for $3.30/lbs. they do free shipping over $99, so I would buy 30lbs at a time. I believe they are sold out currently. I’ll look at PH when I order next month.

I recently purchased Einkorn for the first time from BLUEBIRD GRAIN FARMS (great resource for many organic grains), but I didn't have much success with my bread. Now I understand why!! I am also relatively new to Einkorn. I use a lot of the recipes from Jovial foods for baking. I have also used it for baking chocolate chip cookies. I mill mine myself. The cookies turn out well but not the same as regular flour. Worth the tradeoff for us. Love the b vitamins in Einkorn.

Einkorn berries can also be purchased directly from the Grand Teton Ancient Grains website. I've purchased from them several times. The einkorn grain is always clean. If you buy 48 or more pounds, shipping is free.

I have been buying Einkorn wheat berries from Jovial Foods for 6 years. Naturally sometimes they are out of stock, but in this video when you mention sources of Einkorn for your listeners, you completely ignore Jovial foods and give the distinct impression that Pleasant Hill Grains is the only real source for Einkorn. This is disingenuous and biased. Why not be truly helpful and list several sources?

I can eat sourdough Enikorn, but I prefer Kamut soured. And it's cheaper. If you are gluten sensitive, Kamut actually has the least amount of gluten so it's a great one to build a sourdough starter. After eating gf for ten years, I got a used mill and started milling Kamut and made my own starter. I slowly added it to my diet. Now I bake with it all the time.My starter is almost two years old and going strong. I do agree about Enikorn's consistency. I would say if you haven't eaten an item for a long period of time, go slow. Milled anything is far better than the glue flour in the store. And most gf flours/products truly aren't healthy at all. Do you mill your own corn?

Completely missed the differences in the type of gluten content. Einkorn is Type-A genome, which does not aggravate gluten sensitivities. Many/most/or all modern wheats are Type-D, and that does cause gluten sensitivities. AKA, while yes, freshly milled whole wheat 110% the way to go, there is, in fact, a difference in the type of gluten, not simply the strength or amount. There is also a difference in nutritional profile, even when comparing apples to apples, aka, fresh whole-wheat einkorn to fresh modern wheats. Einkorn is at or near the top in most vitamins and minerals.

What I learned: ancient grains like Einkorn can have a stickier and more runny dough. I am a newby into this, and I have been trying to make bread from organic Spelt. So, I think I will be subing some hard white to perhaps get what I want. The bread isn't bad as is, but it seems too dense, the top sags and experiment away. The not so goods are still quite edible. I am using a bread machine, so it needs some attention with sticky dough.

Hi, I recently discovered your channel and I really enjoy you take on things. One thing I was waiting on in this video was your experience milling it. You mentioned something about it being very different to mill versus hard red wheat, I think. I just recently started milling my own flour again after using Einkorn all-purpose flour for the last few years, and I've been noticing a difference in milling different grains as well. It seems each time I have to readjust the fineness on my mill. I thought the problem was my mill. Your comment made me wonder if it's the grain. Please enlighten me.🧐

Bench View Farms sells Einkorn berries, I buy my rolled Einkorn from them and they are wonderful. Works great in granola instead of oats (I’m highly allergic to oats).

@@GrainsandGrit The rolled Einkorn is smaller than my nemesis oats but works great with rolled barley, rolled rye and rolled wheat to make multigrain granola and hot cereal. I hope you try them, with the world being oat obsessed I needed options!

I first heard of einkorn on a keto diet baker site. I think she said it’s lower carb. I don’t think she was milling her own flour though. Is it lower carb?

So you said that hybridization happens naturally? So how does Jovial keep the Einkorn pure? And you said if something doesn't hybridize, it would die off? And how does some of the other ancient wheat have more chromosomes if hybridization wasn't done by man until the past century and the ancient wheats have been around for thousands of years? I used to get organic modern wheat and sprout it. Then I tried an ancient red wheat and sprouted it. Both of them helped me be regular, if you know what I mean. But then I got the Einkorn cuz of what you said....good marketing, and it really doesn't sprout well and since eating it, I haven't been as regular. So trying to see if I should just go back to the modern wheat or better the ancient red wheat that isn't as old as Einkorn but still heirloom. Any help would be appreciated.

If left alone, all crops cross pollinate if they’re near another similar breed. It’s why farmers who don’t use GMO corn have issues with their corn being contaminated by their neighbors GMO corn because they are in close proximity. Einkorn, spelt, hard red, etc are all wheats and all capable of cross pollinating with each other thus hybridizing. And hybridization started happening almost immediately. Einkorn itself has two different varieties - wild and and domesticated because once man started cultivating it, it changed a little. As far as keeping Einkorn pure, it needs to not be planted close to other varieties of wheat and if they’re saving their own seed that will help as well. 😄

@@GrainsandGrit Thanks for quick response. I know the difference between GMO and hybridization. But have you checked how many chromosomes, protein gluten are in GMO wheat? I know that for sure the majority of corn used in products and sold in USA, is GMO and they don't have to label it. So how can we know if the modern wheat isn't GMO, too? I read that GMO wheat was sold thru deception to the farmers in India and that many committed suicide when they realized that even though their harvest was abundant and came faster, the seed was sterile and they couldn't sow that seed for more crop. They had to buy it from the vendor who raised up the price the next sale. Interesting that I spoke to a farmer who tried to harvest Einkorn 3 times and couldn't. They tried with hull and without the hull, too. I haven't been able to get but a tiny bud from them after trying to sprout a couple of days. I sprouted both heirloom Turkey red wheat and modern wheat easily. The reason for sprouting isn't so much of the gluten problem (which you said is only if we buy the flour) but cuz I read it gives you more vitamins, protein and fiber, too. Plus, the wheat plumps up and I seem to get more bread from it. LOL Can you bring understanding about this to me, too? Seems you have researched more than I have been able about Einkorn. If GMO wheat is being sold, why can we be assured that Einkorn never was. Could that be why the difference in structure and only the farms in Italy have been the ones who have the most? Just curious. Your response would be greatly appreciated.

Thoughts (or info resources) on einkorn for those with autoimmune diseases (Hashimotos), who are recommended to avoid gluten? I feel 100% better after being gluten free for 2 years now, but never have milled any grains. I’m very interested in trying out einkorn, but haven’t been able to find solid info on the affects it may have on thyroid antibodies. Mostly finding conflicting opinions saying either “gluten is gluten and it’ll increase gut permeability” or “it’s safe because the gluten is different”. 🤷🏻‍♀️ I don’t want to jump into purchasing a mill if I won’t be able to use it much. 😅😂

The einkorn thing came about due to the number of people who are wheat intolerant has been increasing exponentially in recent years. You are too young to remember, but back in the late 70's or 80's there was a famine in Africa or some such country. they hybridized the wheat to make the head larger to feed more people. but they couldn't harvest it easily the stalk folded over due to the weight of the larger head. so they modified it again. That's when all of this gluten intolerance started! I hope that helps a little!

I'm excited to take a couple notes in this series because I have a variety of berries, but can't always remember which has more gluten, which is good for what kind of baking. Kamut, Emmer, Einkorn, Rye & Barley all confuse me.

Anything hybrid runs the risk of losing quality and nutrients and no longer staying as is. It's better to stay pure in your grains and not purchase any hybrid grains.

So much of our food has been hybridized. Apples, bananas, tomatoes, etc. It's a natural way God has created to allow a species to adapt and survive. If hybridization was horrible, I'm pretty sure God would have never created the ability to begin with.

Yes Kamut is definitely on the list! I think I may hit the ancient grains first mainly because there's a lot of different answers out there about them and can be quite confusing. I will try to do that one next :-)

I've tested sensitive to gluten and wheat but I tested ok to einkorn. So because of that, I'm wondering about baking bread with einkorn. Is it suitable for some kind of loaf of bread? I can include entire grain, I was thinking of grinding it myself rather than buying the flour.

Home milled wheat and einkorn are far easier for people with sensitive systems. However, einkorn is not suitable for larger sandwich style loaves. It's more for muffins and smaller breads.

Einkorn is the main reason I'm getting into milling my own grain (fresher/cheaper even though Jovial's flour IS quite good). Einkorn (in my short experience with it) is excellent for quick breads (as you said, muffins etc) - best banana bread ever! That said, I have also learned that as long as I stick with organic grains, I tolerate them all well. I believe it is the sprays etc used on non-organic stuff that affects me. NOW .. my next challenge is BAKING a loaf of bread. I am limited to a toaster/ counter top convection oven. But I also have a very large electric roaster that I think may work too (just setting the loaf pans on its rack). In a pinch I could also use the bake feature of my seldom-used bread machine. LOL then there's always the sun oven .. but seems I'm in the bread making mood on cloudy days, so that's a problem 🙂

Is GMO selected genetics any less healthy than naturally selected genetics? Just like organic grown foods are not any more healthy in scientific studies. Using each is just a preference with no health deference as I found in scientific results.

The sources you recommend are fine, but I am seeing shipping charges that are sometimes double the product price. I had to go to Mycolabs to buy my organic sorghum grain {they supply substrate for mushroom growers} and they only charged $10 shipping. Azure costs $20 for a 25 lb bag, and the shipping was $54, one of the other suppliers wanted $38 for shipping. These companies need to sharpen their pencils, because if a few companies don't have high shipping prices, and the other ones do, that means they are exploiting the economic times and making money on it. How the heck would a customer know if that '$54' REALLY went into shipping, or into their profits. I see that Pleasant Hills flat rate is up to $12, but they don't have sorghum in stock, plus I am looking for organic as well.

I was excited to find Einhorn at an Omish store here in central IL. I bought a 50# bag and I've yet to begin milling but I'm ready. It's was a great price at around $123.00.

The weirdo’s that are saying how bad modern wheat is are the same people that are eating tons of gmo crops like corn and soybeans the most Frankenstein crops out there. For me I am working very hard to remove the gmo crops more than anything else.
