I ❤ 4 Generations! They are the nicest people to do business with. Star Dust is my favorite for cinnamon raisin bread. Sky Dance makes the best flour tortillas ever for flavor and workability…I have used Sonoran for years but family has voted for Sky Dance. And Butler’s Gold…wonderful billowy hamburger buns. And when I have a smattering of a variety of ground wheat leftovers throw them all together and make delicious moist bread. I don’t believe you can go wrong with any of their offerings.

Love your content! I mix my grains for their characteristics based on what I need. So if I’m making loaf bread I used more hard red in the mix than I do if I’m making cinnamon rolls or pizza. 😄 I came to this by tasting the grains raw and also understanding the gluten content (how high I can expect it to rise vs how high I want it to rise).

i've ordered from and baked with 4 Generations wheat. I do get mixed up with their names of their wheat varieties. I think I have hard white now. I have to call it hard white, hard red, soft white, etc. due to the confusion.

I find by layering the active dry yeast after it has risen in the water and sugar I get a nice rise on my breads. 1 cup flour add risen yeast Second cup flour add more risen yeast . Do this until your flour has water and yeast in each layer and be sure to mix each layer before adding more flour and yeast. Hope this helps, it works well for my breads.

I never ever sift any of my wheats I get perfect rises everytime. I figure since God designed it for our bodies who am I to decide to take part of it out.🤷♀️ I had the beginning doorstops hockey pucks you name it but that’s called learning and experience. Keep trying things and techniques in the end you will find what works best in your hands

Nope I don’t sift. Only recipe I sift is for biscuits but even then I’m not making white flour or even truly sifting anything out. Just making sure no large chunks are in the flour and fluffing things up 😀

Be sure you autolyse the flour and water together before adding the other ingredients. I warm the water, mix with the flour, and let it set 30 minutes. Then add all the other ingredients and knead. It has been a game changer for me. Autolysing gives the bran a chance to absorb the moisture and soften. Also helps in gluten development.

They get their wheat tested every harvest, and I know they had that information there when I toured their farm. I suggest emailing or even calling them to ask! That way you can get the most up-to-date info :-)
