Gramma Rose’s Taco Casserole. Gluten free & no sugar added

Y’all, this is soooooo good..Roy and I were amazed at how good it is…But how can it not be, if you like tacos…You can make this your own by putting what you like in yours, but try this recipe first to see how you like it…you will be glad you did.
Tips
1 you can use salsa instead of fire roasted tomatoes
2 You can leave out the corn tortillas and use it as a dip with Tostitos
3 You can use Tostitos in it instead of corn tortillas
Recipe
1 lb ground beef
1 medium onion…1 cup
1 tablespoon garlic powder or 2 cloves garlic
1/4 cup + 1 teaspoon taco seasoning…recipe below for homemade
1/2 cup water
1 14.5 oz can fire roasted tomatoes Do not drain
1 10 oz can rotel tomatoes
1 15 oz can black beans…drained and rinsed
1 14 oz can southwestern corn
3-4 cups shredded cheese.. more or less, according to your taste
16 corn tortillas
Preheat oven 350 degrees
Cook ground beef and onion until done…drain..Add garlic, taco seasoning, water, tomatoes, rotel, corn and heat through…Line a 9x13 baking dish with 5 corn tortillas overlapping a little…spread 1/3 of mixture over tortillas, then cheese. Repeat until you have 3 layers…cover with aluminum foil and cook 35-40 minutes…let sit 10-15 minutes before serving
Tips
Garnish with diced fresh tomatoes, green onions, sour cream on side
May use salsa instead of fire roasted tomatoes…1 1/2 cups
You may leave out the corn tortillas and use it as a dip for Tostitos or you can substitute the Tostitos for the tortillas

Recipe for taco mix
1 tablespoon chili powder
1 1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Mix all together and store In airtight container…I triple this recipe…

I have/had a rare cancer in 2017, dissection is the only option, if it's even possible. (Radiation & chemo isn't an option because it doesn't effect it). I was told there's 75% of reoccurance within 5yrs. Depending on where, depends if you live. The good Lord & I have never been closer. He showed me the things to do. Cut out 100% sugar & the nasty complex carbs.... but if u can't do that, focus on eliminating the sugar. It's bad for your entire body & every organ. SUGAR FEEDS CANCERS. In 2020 I was in ICU dying from Covid complications, double pneumonia, Vasculitis, and then got Sepsis. Dr said I wouldn't see my family again (in quarantine). Our Lord Jesus NEVER LEFT MY SIDE. It was 13 days later, I got to go home. I never gave up fighting because HE was with me, telling me not to give up. Get a close walk with Jesus & cut out all sugar & carbs....STARVE THAT CANCER!! ->If you're strong enough, FAST 2 times a week, (minimum of 17 hrs each time) sip on organic chicken broth, & meditate in God's Word. I'm going to remember you in ?y prayers tonight. I hope you received this message & consider the words given.

I wouldn't do any extra gluten if I had cancer Sweetie.. Their is a theory that today's gluten food, can cause stomach cancer. One scientist said 'it's like some mad scientist came up with a formula to cause cancer.' Gluten shuts my thyroid down, and Am very fortunate when I stopped eating gluten, my Thyroid function returned. It doesn't always, gluten can terminate thyroid function.

Here's mine. Shredded cooked chicken, large can of green enchilada sauce, can of cream of chicken soup, chopped onion, chopped jalapenos. Layer of corn torts, sauce, layer of torts, sauce, layer of torts, sauce, top with cheese. It's like a Mexican lasagna. Of course sour cream on top if you want. 😉

I hate canned corn, but love frozen corn.❤ Flavor-Pak corn is non GMO also. I just heat it in microwave in the bag it comes in 6 minutes. I love Pace Picante mild sauce so i would use this instead of the fire roasted tomatoes. I also would add halfed black olives and a can of mild diced green chilies mild. I want corn tortillas. Would flour tortillas work also. And i love the Mexican cheese by Signature at Albertsons. And i would add Parmesan cheese. Sour cream and guacomole would also be good on this. I think i would lightly fry my tortillas before i used them. I like the look of yours, sounds yummy. I also like to just customize my recipes to my specific likes and dislikes. You are my kind of cook. You are making me so hungry.

I make this taco casserole too, except instead of using the corn tortillas, I boil 1/2 bag of wheat egg noodles and at the end I mix the cooked noodles to the mixture and bake it that way, it is so good.

This looks great. Interesting that I made up my own similar recipe about 2 wks ago and we loved the result. I browned 1/2 lb lean ground beef and 1/2 lb ground sausage along with a package of frozen onions and pepper pieces. I placed that in a bowl, added 1 can of diced tomatoes including the liquid, 1 can of drained corn, 1 can of refried black beans, and 1/4 cup taco seasoning & mixed it all together. Instead of tacos, I placed 8 pillsbury frozen (not thawed)cornbread biscuits (they come in a 12-pack) evenly spaced in the bottom of my 9x13 pan. Then I spread the mixture over them. I placed that in the oven at 350°F for 20 minutes. Then I spread shredded Monterrey jack and cheddar cheese on top, and put it back in the oven for 15 more minutes. I cut it into 8 servings & served it with a side salad. It’s just 2 of us, so we saved 2 pieces to eat a few days later and froze 4 pieces for another time. Next time, I’ll try tacos instead or cornbread biscuits.
