@grammarosesopenpantry2729 you use about a teaspoon of baking soda per pound of meat after it has been thinly cut against the grain. Let soak for 20 minutes to an hour in a glass or plastic bowl/dish or zipper bag but not in a metal bowl. Rinse off and pat dry with paper towels. Quick fry or stir fry. It will be melt in your mouth tender. Excellent for cheaper less tender cuts of meat.

The baking soda works so great! I've done it with chicken and I also use it for my backstrap. I marinate my backstrap overnight and then rinse it, dry it well and then dredge it as one would for their favorite recipe. The chicken, about 30 minutes. If you've ever had Chinese takeout and got any protein that was super tender and enjoyed it, you’ll love that quick method of tendering.

Kathie says…Happy, Blessed Easter!!✝️ Yes, that is exactly right about the baking soda in your meat to tenderizing it! Either that or cornstarch. I use cornstarch, a little salt & a little water, massage it all into the meat and you will have very tender meat!! This process is called “Velveting” and is used in Asian Restaurants. This is also very good for chicken pieces. Try it!!

A tiny amount of baking soda works! I also put my meat in the freezer for a little bit-it makes it easier to slice.

And if you partially freeze the meat before cutting, it’s easier to cut. I saved the recipe! And subbed!

At first I questioned only using 3oz of cheese and then *BONK!* you added the provolone blanket on it. 10/10 I'm going to use your recipe this weekend!
