This is the best banana pudding and it is Gluten Free. I have given you alternatives to making it low carb also. Hope you enjoy it 😋😋
Recipe for gluten free banana pudding
2 egg yolks +2 whole eggs or 4 egg yolks
1 cup sugar
Dash salt
2 tablespoons cornstarch
1 1/2 cups evaporated milk
1 1/2 cup whole milk
3 tablespoons butter
1 1/2 teaspoons vanilla
1 box GF vanilla wafers
4 bananas
Whisk eggs until well blended..Add sugar and whisk. Add cornstarch and whisk.
Add milk and butter and whisk until mixture is smooth.
Microwave 3 minutes, whisk..microwave at 1 minute increments until thick, whisking after each minute.
At this point you can put your pudding together, but I like to put my custard in the fridge and let it cool. It keeps the bananas from turning dark.
Layer vanilla wafers in 9x13 casserole dish.
Cut your bananas and layer over wafers.
Pour custard over bananas.
Crush vanilla wafers over pudding.
At this point you can top it with meringue or whipped cream..
