I've been lucky enough to travel to Thailand twice and can confirm that street food is THE way to eat. The restaurants are great, don't get me wrong. But when you have someone invest a large part of their day and working life into making and thus perfecting literally the same one or two dishes over and over and over as this woman clearly has- it shows in the quality, taste, and experience of the dish they are creating. This woman (and other street food chefs at this level) know which fresh produce markets to hit, and how to source the best quality ingredients in only enough quantity to last the day. No staff, nearly 0 overhead, same dish over and over, produce harvested that day or within a couple days, and probably less than 100thb ($4). Pair that with the fact that around dinner time you can grab an ice cold 2 pack of Leo's at 7-11, wander through the food market, grab the best pad Thai you've ever had from her stall and another equally delicious dish to pair from the stall next to hers, hop on your scooter in nothing but a pair of shorts and crocs, head down to the beach to watch the most gorgeous sunset you've ever seen... I forgot where I was going with this. God I need to go back to Thailand😭

I married a few times with men, worked in prostitution, and one night before bed I asked God that if hell was real he would show me. so I went to bed and quickly my soul left the body and I went down to hell. I heard horrible screams of despair, women screaming, I saw many souls falling desperate, scared there and the demons paid those souls and dragged them away. my grandfather died of a heart attack, because he was an alcoholic, I saw him in hell dragging himself and asking me for help. but I couldn't help my grandfather. it was sad the look on his face of despair and torment and pain. the look of the people in that place is a horrible look, the expression on their face is indescribable with words I can't describe how ugly that place is. I saw a woman on nails being tortured. there was a torture ballad down there in hell. and this woman was dancing on top of giant nails! she looked at me asking for help and with a look of suffering and despair, but I couldn't do anything for her. I was not understanding and scared seeing all that. so soon after I returned to earth and called my mother, and a friend telling what I had seen and saying that hell is real. I called them with a shaky and scared voice. so today i gave my life to jesus christ, recognizing jesus christ as my lord and savior because i know hell is real and i don't want to spend my eternity in that suffering. I read the Holy Bible of Christians and I follow all the commandments. every day I fight to stay firm because it is not easy to serve God, there are many struggles and difficulties, but I am sure of my salvation and I know that I will live forever in heaven. Today I am no longer a transgender woman, I assumed my real identity as a boy and I live a simple and happy life. what is black sweet sauce? that sweet soy sauce or something else? also what's with the huge amount of what looks like MSG that she adds? and what are those herbs she's packing? clearly must be coriander and/or thai basil? or something else? cheers

here is one of my favorite things about Thailand. the food you eat here in the US that is 'thai food' IS what they eat in Thailand. Like this lady, you can get fresh pad thai as street food made right in front of you... for a $1. Same with basil and pork dishes. I think its the only place I have been around the world that eats as we think they do. Meaning, the menu at Taco Bell... that may be 'mexican food', but its not a reflection of how Mexican people eat. Same with Chinese food, there is no 'General Tsao's chicken', nor is there a general Tsao. Italy... same thing. But the Thai food we ate in Thailand was everything we knew and loved about Thai food.

I wish I could smell and taste this. ❤ She is a master for sure! We love Thai food. My husband is diabetic and we had to give up going to our local favourite for Pad Thai because it spiked his blood sugar so high. I just bought everything to try to make an authentic version at home without the sugar. Wish me luck! We have wonderful grocery stores here (suburbs of Toronto, Ontario) so I have found everything I need except for the preserved radish. Hoping my replacement works well. I want this to be as real as possible without going to Thailand (but wish we were there). Much love from Canada!

Love their spices/herbs, but as you mentioned, so much sugar! I'm not diabetic, but I cannot tolerate this level of sweetness in such foods. Hotness - yes, give me more!. Sower notes - welcome! Sweet - no way, the ingredients she's using are already sweet, why adding so much sugar on top of it?!
