Aubrey Allen's butchery school for April fell during Great British Beef Week so to celebrate, the chefs from The Landmark Hotel that attended were able to watch a rump of beef butchery demonstration by Aubrey Allen butcher Joe, he also prepared a feather blade into flat iron steaks which is what the chefs then did themselves. The afternoon then looked at South West Lamb where the chefs created sustainable cuts (footage not shown).
