In this recipe Clara uses 5 lbs of flour to 2 oz. of yeast. Add room temperature water throughout process until the mixture feels like proper dough. Add touch of salt and sugar to taste.

My grandmother always used to say that too. She was the daughter of immigrants and grew up during The Depression too. She was a great cook too like Clara. May they both rest in peace.

I am child 8 of 8, raised by a single mother, we were poor to say the least, but it's amazing to see hear the similarities, my mom's parent's were both from Italy, I can make a meal out of anything, grow a garden, and repair clothes over and over, it's kinda funny when I see my friends struggling who make the same money as me, well, I but generic, I shop of clearance racks, I repair things before I throw them away, and I generally only buy what I need, when I do splurge I make it count

That's how I learned from my grandmother, 55 years ago. "Add water until it looks and feels right." lol I still do. Recipes are for sissies.

Sad thing is back then, the poor all made home-made and relatively healthy food (If ingredients weren't tampered with) so things could be enjoyable and the food can act as an upliftment from a dark time, but the poor today only have access to processed/ nutritionally low and empty calorie foods in what can be described as a 'food desert' and relegated to future health problems. While those who can afford it spend top dollar for artisanal foods which are made from simple ingredients and funnily enough the food of the poor in the past. Very weird how time has some sick humor. We can learn so much from Clara now and always, her wit and wisdom will always be with us now, and I am forever thankful.

After seeing a few of the videos and finding out that she passed away, It was like family...I cried...some of her recipes were like my grandmother's but my grandmother did not have her lovely disposition. she lived my grand grandmother to 94..she was not that pleasant..but her stories were good ..and I have her recipes...

Clara was a lot like my grandmothers, thank goodness...she always made me feel so Blessed and happy. I learned things about the Great Depression I never knew about too...I so wish all of us could have had or do have now a Mom or Grandmother like Clara...and yes, I cried too, when her family put the video on about her passing away...she was family...😊🙏💖

TheCRAZYCAT68 I don't know if you're a spinach or tomato fan, but my husband loves it with spinach and tomatoes, along with peppers. I have my own technique with making the bread. I make french bread when I make this. It's really tasty!

Yes, the recipe calls for 9 cups flour, 6 tsp.rapid rise yeast, 3 1/2 cups warm water, 8 Tbs. olive oil, 1 1/2 Tbsp. salt. It makes 6 loaves.

So heartwarming and comforting to revisit these wonderful videos! Clara reminds me so much of my dear Nonni and my mom, who made many of Nonni's recipes. Mom used to make the well in the center of the flour just as Clara did, and the simple homemade bread was out of this world. She also made pepper and egg sandwiches. Thank goodness for these priceless videos that keep Clara and her legacy alive.

I wish I could just make 2 loaves at a time - does anyone know how to adjust the amounts? Much love to Clara's surviving family - you are so lucky to have had this inspiring woman. How about that crunch as she’s cutting the bread! That’s gotta get to ya. I so remember those white pans with the red trim when I was little in the 50s. WISH I HAD ONE. There were a lot of little white frame houses with red trim in those days. Always seemed like a theme color for the 30s. Round about '55, I remember it seemed like every other car was maroon or a similar color.

It looks like 5 pounds of flour and a 2 ounce cube of activated yeast. That's my best guess so I can't be sure. My gram made something similar only she added 2 teaspoons of salt as well.

Making a half batch is easy-peasy! If you don't have an accurate scale so you can measure out 2.5 pounds, then look on the side of the five pound bag of flour. It will have a schematic that along with calories, etc., shows this information at the top: The amount it counts as one serving and how many servings the bag contains. Multiply the two numbers to get the total amount of flour in the bag, then divide by two. For example, if one serving is 1/2 cup and there are 20 servings in the bag, it contains 10 cups total. So, half a bag is 5 cups. Put that amount of flour in the bowl, one package of the refrigerated type yeast Clara used, add your water and make the bread. Voila! You will have a half batch of Clara's delicious bread. I need to try it myself. She is a delightful human being and a great cook.

when i was growing up we were very poor, lived 12 miles out in country with no car. my mom could make something out of nothing. we raised our own food and had huge gardens, my mom worked so hard and could feed an army. she had that talent of making something out of nothing. she was born from depression era parents. guess that's where she learned it. miss you momma

For 5 pounds pastry flour she uses 2 ounces fresh yeast. Does anyone know how much dry yeast equals 2 ounces fresh yeast? I can't find the fresh yeast in my area. Clara was so dear-a treasure. I miss her.

About 0,28 oz (~ 2 teaspoons, not heaping) of dry yeast should be enough for 1 pound of flour. :)

Even now my mom will put food on our back porch during the Minnesota winters. I'd do the same if the climate where I lived would allow it. I wonder if/how often food was stolen from gardens or yards? I don't think things would be nearly as orderly if this happens again.

Fresh, homemade bread with minimally processed ingredients is good for you. It's the preservative-filled, highly processed garbage bread that we buy in the stores that is so bad!

wish she explained it better like how long did you leave it in the oven and now many degrees was it 350 ? for 25 min ? can you tell us please mahalo looks ono resemble my vovos (grandmother in portuguese) bread growing up I remember going there and smelling the fresh bake bread, vuvu is (grandfather in portuguese), my vuvu lived till 96 and my vovo lived till 94 how lucky I was to remember them on kapahulu ave next to bills bakery and green lantern chop suey,

Thank goodness Clara had a grandson who recognized just what a treasure he had in this precious loving lady and he knew the rest of the world needed a Clara fix. Bless him for sharing his grandmother with us.
