We might have scaled down our Greek Chicken and Potatoes recipe to make it a little quicker and more “bowl-friendly,” but to even things out we also made our Big Fat Greek Salad recipe much bigger, and fatter. Enjoy!

Chef John literally convinced me cooking it's not that hard. I am one of these "I CAN'T COOK" type of people, I think I've watched like a hundred of Chef's John videos before actually getting off my couch and trying to make something. With everything I learned from you, now I can honestly say I enjoy making my own dinner. Chef John, Thank you so much for your work!

I'm a lower intermediate level cook, but these videos got me out of a cooking slump. There's just something about his approach that makes it feel like "yeah, I can do that." Apart from everything else, he is limited by recipes he can show up close preparation on. I think that helps make sure the recipe is doable by people at lower skill levels. After I watch them, I think, "I could do that, and it looks delicious, so now I really want to try it!"

I made this for my wife tonight. With some minor alterations. I had a bone in skin on turkey breast I needed to use. So I marinated that after slicing some cuts into it to help the marinade along and roasted that whole alongside the potatoes. Also tossed in chopped red bell pepper to the salad. Other than that I stayed pretty close to the recipe. 10/10 absolutely amazing dish. I ended up being the geek of my Greek bowl tweak.

I MADE THIS! AND IT IS DELICIOUS! When I watch this 4 days ago, I thought, "We have boneless chicken thighs in the freezer..." Took them out of the freezer and threw them in the fridge. Read through the recipe. Yesterday, about 2, I put the marinade together, added the chicken, threw it back in the fridge and thought, "In 6 hours, it's going to be too late to cook." So 24 hours later, I put it in the oven. The chicken tastes AMAZING. Rave reviews from my family, Chef!!

Made this last night, and while I have to say that I'm not really a "salad for dinner" kind of guy this really did the trick. Maybe calling it a bowl matters in ways we dont yet comprehend. The chicken was full of flavor and the dressing brought it all together. Served it with warm pita wedges and had a great meal with the family. Thanks again to Chef John for adding to my repertoire.

for the potatoes after cooking, i find letting them sit as you said then I lift the foil up and peel the potatoes from the foil. they separate super easy for me that way and i don't lose much. looks delicious.

To be fair "bowl" sounds more hearthy than "salad", because it feels like theres more carbs like pasta or rice or potatoes or buckwheat and meat WITH some veg than there is just greens. So yeah, bowl does sound more appealing than salad

EDIT: Brain decided that reading correctly isn't a thing...so my comment was a product of that. My bad! Since when did "salad" become an unhealthy sounding word? I know no one that thinks this way, and I've never heard the sentiment it in any keto videos or weight management channels, so... 🤷‍♂️

Every Korean/Asian viewer seeing the scissors is probably very familiar with kitchen sheers. Such an easy way to cut the chicken & a nice "hack"

Like the comment/pun. I also use scissors all the time, to cut pizza, to cut up herbs in a glass, to cut chives over dishes, too big bits in the saucepan cooking etc etc

Great recipe Chef John! This is one of my favourite dishes in the summer months. My husband always makes this chicken and potato salad as a side dish on nights he fires up the BBQ. Greek dishes are definitely ideal for summer nights spent in the garden type of food. So flavoursome. The combo of the herbs and chilli flakes is delicious 🍹🌞

This is a fantastic recipe! The second time I made it I put parchment paper on the sheet pan on top of the foil. It worked great! The potatoes didn’t stick at all and still had a nice crunch.

This is screaming at me to add some cubed up bread soaked in those beautiful pan drippings. Sort of a panzanella twist. This looks really good, and is very similar to one of our favorite Chef John recipes - Greek Lemon Chicken and Potatoes. Can’t wait to give it a try. Thanks, Chef John! 😀👍🏻
