Akis, you are a great teacher. You make it easy for your audience to try delicious Greek inspired recipes. I wish you would use a different metaphor when describing how to handle phyllo dough. In Serbia we spinkle the phyllo with oil, egg, some Greek yogurt and spakling water mixture. Give it a try, its more calories but tasty.

Aside from the sparkling water, my grandma would put all those ingredients along with feta when she'd make filling for tiropitakia (mini cheese pies, not phyllo-based).
