Steaming the spinach does the same thing but retains more of the vitamins and minerals in the spinach! A tip from an Italian specialty chef who was trained by several Italian chefs and I’ve found this method also keeps more flavor in the spinach.

you can do pretty much the same thing with a small amount of water and covered. If you want to be really fancy put in an ice bath afterwards.

When I make ravioli I generally use frozen spinach (OH! The Horror! I know. It's cheap. It's fine, and I can have it out of season.) and cook it slowly in a frying pan to drive off the water. I wipe just a touch of butter in the pan first to keep the spinach from sticking if I let it get too hot.

Bravissimo!!! When I make this, I wring the cooked spinach in a cheesecloth to squeeze out the most water I can so it needs less flour. And before cooking all of the malfatti, I cook only one in order to find out if it holds together. You skipped these extra steps because you don’t need them… YOU ROCK!!!

Florentine Mom tried this on us in the 70's meat shortage. We kids wouldn't eat it, so she made gnocchi. Initially without potatoes, but eventually she added potato flakes. Gnocchi 3 suppers a week. One with butter, one with tomato sauce, & one with beef bone broth (bone's were affordable).

In Tuscany, its original place, we make them with less flour and use the 2 spoons for a knell it never touches the fingers/hands, the base like yours and at rare times a light , leggerissima, tomato vellute with basil and butter. Yam.

Italian cuisine is packed with vegetarian traditional recipes actually 😉 real pizza, pasta al pesto or tomato sauce, pasta e fagioli, minestrone, parmigiana di melanzane, risotto allo zafferano....... It's maybe harder for vegans, but pizza and dried pasta with vegetables are a perfect option since the dough does not require any butter

My Austrian Grandmother passed a very old ...and complicated recipe called Malfatti or “bad ravioli” loosely translated. (makes its own pasta during the boiling) my mom experimented over the years and we preferred to use small curd cottage cheese or 1/2 and 1/2 each. The old recipe takes forever and every bowl and pan in the house, and the eggs must be separated , the whites whipped, and Loads of Rosemary and Thyme. It’s nice to take some shortcuts since I always have to do a complete kitchen cleanup...and definitely mop the floors with all the flour I spill! Glad to learn they’re the same thing! Using Seasoned bread crumbs inside the mix really adds a wonderful texture, and cuts down on the gluten! I can’t tell the difference in taste using the cottage cheese instead of ricotta...much less fattening ...or so mom said! 😇😎

In my family, after cooked in the pan with butter and sage, we put malfatti in the oven with a generous quantity of parmigiano reggiano on the top, and cook them until there Is a golden "crosticina", whic is amazing, I suggest you to try

Eva, Harper: there's a much faster way to squeeze water out of spinach. Use the potato ricer, and squeeze slowly, then tilt the ricer to pour out any water that squeezes out on top. It is far more efficient and effective than using a strainer and a wooden spoon. With much less effort, you can get the spinach much drier.

Ironically, I made this for the first time 2 weeks ago. The recipe I translated from an Italian one and that recipe said to heat a clove of garlic in oil, remove the garlic then add the spinach and cover for 7 minutes and not boil the spinach. Everything else was the same. They are delicious. Next time I just need to take more moisture out.

I'm sure there's an Italian version of it) with chard from the summer garden - those are the greens I'm using today. Question: Cream or No-Cream? Which is the classic way? Or, as is the standard with most cooking, "if you have it, use it, if you don't, don't."

I love gnudi! I usually make mine more bite size and in the summer I often have them with lemon butter. Harper, I agree that they are the so good because they are like eating only the best part of the dish! They always make me think of eating hao gao the airy shrimp balls of dim sum.

They are called malafatti because when this was used to stuff ravioli that were poorly sealed or the dough not made quite right,, the stuffing would pop out of the poorly sealed pasta casing and boil around "bare" in the boiling water.
