Nice one! In the northwest of Spain we do the same recipee but instead of tomato and celery we put potato and pepper. And, at the last 20 - 15 min we add one fresh chorizo and a slice of pancetta. Of course all of that with a great olive oil.

I love this recipe. I’ve made it with & without tomatoes due to a family member who can’t have tomatoes & he asked for another bowl. I even forgot the bay leafs the 2nd time & it was still soooooo gooood!!! Ty ty!

Every Friday during Lent, the parish to which I belonged served (after Stations of the Cross) a dinner of bread and various vegetarian soups. So, instead of observing the Lenten fast at home, it was far more enjoyable to observe it with the parish community. Lentil soup was a staple of their repertoire. It's one of my favorites.

I also add some feta and fresh ground pepper when I serve my dish. I have also tried to add pieces from parmigiano reggiano when I didn't have feta in the soup at the end and it is lovely. Try it!

I made this w minor modifications and it is a really nice and hearty everyday soup, or maybe in half portion the beginning of an elaborate dinner. I used the pressure cooker, and much less liquid/broth. 20 min under pressure for unsoaked green/brown lentils. My soup was thicker, which is how I like it. My other additions are a teaspoon of cane sugar in the beginning (to help those tomatoes), and a dash of lemon juice in the end. I used Worcestershire sauce for some umami, instead of the sides.

A version of this is an absolute staple "masoor daal" in many parts of India. Carrots and celery are not usually added though. What we typically do is add some turmeric, red chili powder, coriander and cumin powder and garam masala to the onions when they are sauteing, then add the tomatoes, then the lentils and cook it all off. Sometimes baby spinach is mixed in right at the end to make it more nutritious. The daal is then served garnished with a few teaspoons of cream or yogury and freshly chopped coriander(cilantro) with naans, parathas or rice and is almost exactly the consistency of this soup. :) :)

I know this is random, but you shouldn't mix lentils with dairy. It can cause an upset tummy. The dairy also blocks iron absorption (and lentils are a good iron source). Sounds yummy without the yogurt though!

I make something like this that I adapted from Stella Kopulos' & Dorothy Jones' "Adventures in Greek Cookery" (Thos Y Crowell Co, 1972). I use cider vinegar instead and often add a handful of coarsely chopped greens towards the end - like kale or spinach. Sometimes I even meatify it by frying some diced kielbasa with the onions. I never make it twice the same way. Well, hardly ever.

lentils get a nice touch when cooked with a bit fruit juice. a cook i know cooks them with tons of bay leaves in just orange juice, those are too sweet for my taste but def not bad.

There is a very good reason for using orange juice.Lentils have 8 times more iron than spinach.The combination of lentils and orange juice makes your body to absorb the maximum amount of iron.Just imagine Popeye the sailor to eat some of that instead of spinach !!

I used to dread this dish as a child, now I go to restaurants and pay $6 for a small bowl. Corona lockdown has me making it at home for now. This recipe is nice, it got me to add cumin to the batch I'm making. I prefer balsamic vinegar.
