My wife - Northern Thai - makes this in the US with carrots and cabbage, and sometimes tart green apples added. All the rest is straight som tum. It’s a hit and Farangs call it Thai cole slaw. Recent to this channel and I really enjoy the videos and ideas.

I spent three years in Udorn and learned to make this and sticky rice. As I watched you make this it brought back fond memories and come to think on it I think I will grab a papaya off my tree in my front yard and make some. Best of luck to you and good cooking.

LOVE, LOVE, LOVE YOUR CHANNEL. SOM TUM IS ONE OF MY FAVORITE SALADS. I WANTED SOME THE OTHER DAY BUT REALIZED I HAD NO PAPAYA. I LOOKED IN MY CRISPER BIN AND FOUND A NICE GREEN/WHITE CABBAGE. LET ME SAY, IT WAS AWESOME. I WOULD ENCOURAGE ANYONE WITHOUT ACCESS TO GREEN PAPAYA TO GIVE THIS AMAZING DISH A TRY USING FRESH CABBAGE.

Hi there! You can absolutely make this a couple of hours ahead. Make the whole thing, wrap it well and put it in the fridge (it's almost better cold!). When you are ready to serve, just toss it again because the dressing will fall to the bottom as it sits. I would also crush the peanuts separately and add them during final tossing so they stay crunchy. Good luck!

I love that mortar and pestle! I have been making papaya salad several times a week but without the tamarind sauce or fermented fish paste. (or pickled crab for that matter) I was in Isaan and ate that every day and made a video of them making it but still learned a lot from your video! I am so glad I found your videos. The first one was learning Thai phrases. Now I'm hooked.

Hi there! I know how it's made BUT I have never made it myself because I can buy it easily. It's not soft shell crab we use, they're regular hard-shelled crab but we use small ones. You can try going to an Asian store and find live small crabs. The recipe looks fine but it's big...you might want to cut it in half. Keep it in the fridge if you're going to eat it in the next 3-4 weeks, but for indefinite storing, you can freeze them in the liquid (that's how I buy them from the store here, frozen)

you can use a molcajete for everything up to the dressing ingredients, and then mix it with the papaya in a larger bowl. But I think it might be too small/shallow for the whole thing. Unless, of course, you have a really big molcajete :)

When I met my husband he lived with a Lao family and I absolutely love papaya salad, and everything they made was so good. Never ate hot as Thai Chili's and boy I cried but couldn't stop eating it. Trust me I felt it the next day though LOL 😆

The pickled crab shell is actually quite thin and soft and doesn't shatter the way fresh crab would.

My mom is Esan. She never used peanuts in hers but we'd have fish heads or crab legs in it. I definitely need to try it with the dried shrimp though. And the bla ra...I've had to clean jars that exploded under the sink.

The balance of fish sauce/sugar/lime juice is always a moving target. I’ve made this many times and like many things Thai every batch is a little different. The key is to embrace the difference! Once I try to “fix” it, it goes south pretty quick!

I've traveled Thailand quite a bit over the years and would eat Som Tum everyday, phet mak (not typical for the average American right?) and it became one of my favorite Thai foods. I'm looking forward to making it soon. Great vid and thanks for sharing.

Bagoong. You have it in Thailand. It is similar. Not exactly the same. The Thai name is shrimp fry paste. I tasted this before.

Cambodian,Thai,and Lao have many different ways how to make papaya. Lao people would use shrimp paste, Cambodian people use fermented fish paste, Thai people would do the same. It doesn't matter what kind of method that a person is making Papaya salad.

I don’t have papaya here so I use apple as substitutes from our garden. I followed this receipt and it’s as delicious as with papaya. In Thailand they also just it tam apple

I tried making papaya salad before and I just never get the papaya salad to have more liquid like those I saw from Thailand or the one I ate. Do you know how they can make it to have more sauce that doesn’t get soak up?

I grew up in Vientiane, Laos because my dad was with the French Embassy I we used to make it this way without the crabs and pladek (can't take the smell ) we used only fish sauce. It was delicious!

I love the lao style papaya salad. I have only had it once and I remember it being really spicy... Like the kind of spicy that u have to keep eating or u feel the burn more. Being in Florida, I can't find the last few ingredients... Especially the crab.

Just wanted to say for those worried about peanut allergies. You can make this dish without peanuts. The taste is still relavtively the same. My mother always made her som tum without peanuts. I don't know if it was because of it being a regional thing for her (She's from Chai Nat), or if she didn't like peanuts in her som tum. It could be either one. I never asked...hehe

Homemade is definitely the way to go as the spice levels can be adjusted to your own palate. And I agree with some of the commenters here in that I prefer the Lao version. IMO There seems to be a bit more complexity (likely due to the homemade padæk, if you can get it, and the salted crab) than in the Thai version. But sometimes (most times) you're happy with what you can get! :-)
