Here is a new and improved recipe for the famous northeastern Thai salad! This time around, I provide you with lots of tricks, rips, and explanations to make sure you can really master this classic, delicious salad. For my health-conscious fans, this is also a very healthy salad, so I can really let myself indulge without having to hold back! Serve it with some sticky rice, and try changing up the vegetables because in Thailand we make hundreds of variations on this salad! Note also that it is gluten-free and essentially fat-free, minus a little bit in the peanuts and dried shrimp. Enjoy!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Our friend wiggy from Thailand whom we so dearly love so much like part of our family because we have known her since the eighties and have found her again after losing contact with her used to make this and I used to love it so much. Sometimes she would make milder versions both hot and fish-wise and sometimes she would make it strong. I remember how at first I was grossed out by the smell and taste of it but over time I loved eating it. Sometimes when she made the much weaker ones I would not enjoy it as much. Now that I know what is in this delicious recipe I will enjoy it even more. I think I will head out to my local Laos food restaurant and order some of this; "the strong one." What I love about this video is that she went through the technique and process thoroughly, not just the recipe. We have a lot of papaya trees and chili plants in the farm. Cannot wait to try this. 🇵🇭

I didn’t have papaya so I used cucumber and jicama and it was still so bomb! Honestly it’s the sauce that makes this recipe in my opinion

My mom use cucumber or vermicelli noodles also. I used carrots or raw mango :) in Thailand they have so many varieties and even corn or crab but that's another recipe. Also shrimp.

Great recipe and explanations! I used it as inspiration for a vegetarian version. A little lemon pickle (Indian pickle) took the place of the pickled crabs and gave complexity + acidity + some salt and heat. Delicious!

Som Tum was my favourite dish in Thailand. I actually prefer the Som Tum Poo Pla from the Isaan region, which seemed to surprise many locals as westerners tend to shy away from that variety. I'll definitely make this some time soon!

I do not usually use tamarind in my papaya salad but with your recipe, it’s seriously spot on Thai flavors! I now use it all the time! Thank you for this recipe! Yum!

My whole family love papaya salad. We remember this when we were children, living in Singapore in the early 60's. I made one from just memory and what my mum remembered from when we were there. It turned out okayish!, but it can be better, after having watched you making the authentic version with the right ingredients. I'll be out shopping for the ingredients and making one very soon. Can't wait

Years ago I watched this video, purchased all the ingredients (including palm sugar that I still have), made at home. It was a sticky endeavor & I used too much pepper, but I crave this salad! I don’t make it very often, but when I do...I use this recipe. Thank you.

Claymore007 I was wondering what makes thai papaya salad and Laos papaya salad different. I mean I know they’re different but I wanted to know in both distinctive ways and thai is sweeter and sour and Laos is spicy and fishy

Laos style usually use padek which is a preserved fermented fish sauce. thai style use the light fish sauce most people are familiar with

For the palm sugar, I often just let it soak in the lime juice that I squeezed out. The acidity breaks and dissolves the hard pieces of sugar. Dissolving could take a while depending how big the sugar pieces are.

Brown coco nut sugar or even white sugar is basically just as good. I see most vendors in Thailand use white sugar.

This is a great alternative to mincing or crushing garlic, and I bet it gives it a unique flavor crushing all the ingredients together. I can't wait to try this. Made this recipe and it was AMAZING. The first Thai dish I've made at home that was actually better than what I've gotten at a restaurant. I used the 3 Crabs Fish sauce that you've recommended and I think it really makes a difference, it's just not as funky as the other ones I've cooked with.

Pai: I made my first Green Papaya salad today using your cookbook recipe, along with my new mortar and pestle (the clay one specific foWr GPS. I used 1 Tbsp fish sauce + 1 Tbsp Shrimp paste. It was excellent!

I think papaya salad doesn't have shrimp paste. But if you like, that's fine.

That’s the Laos version with crab paste. Will stink the house but worth it and add carrot to it for a beautiful color and taste great then try sweet rice (aka sticky rice) instead,you will love this which I love every time I make my papaya salad.

I love Thai culture which I learnt from watching Thai series - always wanted to eat som tum thai but was worried that I wouldn’t be able to eat uncooked prawns and other seafood I usually see in most of the dishes so really glad that it can be made with cooked prawns - dehydrated as seen here definitely trying it.
