just gotta drop in to say that the adage that 'good editing is invisible' is totally true, unless you're specifically watching for it and i have been. Bri's production quality on these videos is constantly first class! the variety of angles which are descriptive but not excessive, the cuts to maintain interest and anticipation, and your lighting and sound are always excellent. I love these videos not only to get new recipes but also just to watch you cook! keep up the amazing work Bri!!

agreed!!! one particular cut/sequence that was very pleasing - the match cut of him taking his phone out to set a timer then cutting to a close up of said-phone in motion of sliding onto the cutting board. small detail that isn't totally necessary to showcasing a recipe at all, but in the grand scheme of things, creates such a cohesive product for the viewer to enjoy. what a treat!

I received a 14 inch pizza stone for Christmas a few years ago. I use it on my grill to make pizza a lot. I make the 12 inch cast iron pizzas (think Pizza Hut personal pan pizzas) but come summer it's out on the grill. My oven only goes to 500 but this grill hits 650 If I let it. My daughter has loved pizza her entire life we call her a Ninja Turtle, she loves these pizzas. Great show.

Pizza on the grill, always a good time. Just throwing a thought out there - par bake (grill?) one side for 1-1.5 minutes to give it a little crisp and color, use that as the topping side.

I actually used our flattop grill a few weeks back and just covered the pizza with a cast iron pan. Worked out pretty well.

Brian, love a recipe that doesn’t require another specialty appliance! Thank you! I’ve noticed the past couple vids you talk directly to the camera, really loving those bits and the tad slower narrations. You’re really hitting your stride! Also, thanks for salting your pizza, so many pizzas (especially restaurants) are meh because they forget the salt!

14:32 You can bake a crispy bottom longer bake NY style pizza in an outdoor pizza oven. After the stone has heated up enough,lower the flame to the lowest or you can even turn it off for a minute or so after launching your pizza.

I just made some grilled pizza the other day! I did mine in a pan and over low heat the whole time, it turned out great! the pan added a little more time for the top to get more well done. I did mine in a full sized sheet pan, and I put Fresh Sungold Cherry tomatoes, goat cheese, spinach, salt, pepper, a bunch of olive oil, and the kicker---quartered dates. It was one of the best pizzas I've ever made, ill be making it again. absolutely delicious

Grilled pizza is dope, and one thing we've done before is use a pizza stone on our grill. I was able to find a round one that fit my little Weber grill with about an inch clearance on the sides. Worked a treat, I'll never spend 1k on a specialty pizza oven 👍✌️

You can get better top heating if you cover the pizza with a baking pan. Pref one a couple inches bigger than the pizza and an inch or two deeper than the pizza is thick.

You have no idea how many issues this video solves for me. I so appreciate the detail regarding the ingredients and the challenges of the contrasting temps from the bottom to the top of the pizzas. Your process really gives me confidence that I won't turn another pizza into a charcoal disk. Yay Brian!!

I've done what he did before, and it definitely takes some practice to not burn the bottom of the pizza while at the same time thoroughly cooking the top. It's not something that you get the first time, at least I didn't.

I usually cook the dough about 30% on one side without toppings, then I flip it and assemble right on the Grill!! I truly like the Broc. Anchovy Pizza, definitely going to try that One!! Thanks Bri!

I've been using a pizza stone on the grill for some time now and have had great success. 800 degrees on the stone and 700 in the oven. Works a treat

I like grill pizzas without the stone/steel. Apart of what makes grilled pizza unique is the extra crunchy crust. While you can definitely get a good crust on a stone/steel, you just can’t match the direct heat. But to each their own!

You can put the fresh mozz in the freezer for a little while and that makes it easier to grate.

Outdoor kitchen essentials - large toaster oven (can be covered with a mini grill cover when not in use) and a grill. Have made pizza using both and yes, so nice not to heat the house or go out to eat. Debating the merit of a gas burner or gas grill with a side burner (currently I just have a large charcoal grill). Enjoyed the video. As a few others have said, other grill videos and recipes are much appreciated for summer use :)

We have been making pizza on the gas grill for a while, and that has been the best way so far. The secret is to use as many pizza stones as will fit on the grating (this way, it doesn't matter how wide the bars are), and preheat them for at least half an hour. As a bonus, the heat is much more even and won't burn the bottom as easily.

i love making broccolinni with anchovies but i melt the fish first in the oil and garlic before adding the vegg and cook a bit alots of parmesan when mix with pasta😋😋😋😋😋😋

Brian, it's 120+ where we live, no lie. We have set up a camping stove on our patio along with our grill and smoker. We only use the kitchen early in the morning. Needless to say, lots of left overs and microwaving, and some toaster oven or crockpot. Thanks for the tip!

Hey Brian. Just wanted to say that l tried your pizza. Sadly the skies opened before l got a chance to try your cooking method so, l cooked it on a pizza stone in the oven. It's winter here in Aotearoa/ New Zealand so, l knew l was expecting a bit much from the weather Gods. It turned out really nice and the dough was lovely so, thanks for that. That's definitely a keeper recipe and l'll try again with the barbecue method in summer. There's only me so, l made half a batch, prooved it until the next evening in the fridge then put one of the dough balls in the freezer for next time. I used homemade pizza sauce from some tomatoes l'd bottled at the end of summer and cooked the pizza with mozzarella and the sauce and put peperoni on one half. Then, when it was cooked l put prosciutto and fresh rocket on the other half and topped it with a drizzle of olive oil. Prosciutto and rocket is a fantastic topping and smoked salmon, capers and rocket done the same way is also great. Would love to hear if anyone tries it.

Hey Bri..That baking steel that you have in your oven will also work great in your BBQ! You need to be careful with the heat as the steel can get ripping hot, just use your IR thermometer. Your steel will also become a griddle and you can just imagine the possibilities, right? If your steel covers a lot of the grill surface I place it on two 12" sections of iron pipe to lift it up and ensure proper burner air flow. I have made a lot of pizzas and hundreds of english muffins on my gas grill, its great.

You could use a pizza stone as well as the pizza steel on the grill if it has the thin metal grate. Plus it will help absorb the direct heat. Wanna try this myself!

I have been using a grill to make pizzas for like three years. They are so good. I thought I was the only one who was doing it. It all started because we could not afford one of those fancy Ooni ovens. Now I am not changing my cheap Chinese grill!!

Last winter we had a badass ice storm (I live in Austin). It knocked out my power for a few days. I have a gas range so I could still use the stove but not the oven. I had some frozen pizzas I needed to eat so I grilled them. They were pretty damn good. After seeing this, I will have to give it a go with a real pizza! You are a genius! Those boojie pizza ovens are a uni-tasker (A.B.) and WAY to expensive.

Thanks Brian, another way to enjoy good pizza. I just bought the Expert Grill 15in Pizza Oven for just $97 on roll back I haven't assembled it yet but I've seen lots of videos about it. Charcoal fired and quickly gets up to over 800°. Yes they require a lot of attention but we're already used to that. Keep up with the great content. 🍕

Bri that is awesome but you really need a Big Green Egg. That ceramic dome gives you the convection you need to get that top nice and toasty before the bottom burns!! Then when you are not cooking pizza you can make ribs or pulled pork on your egg or maybe a steak grilled to perfection! Or maybe smoke some salmon! All that said I would totally cook a pizza on a gas grill if I had one! This is way better than oven cooked pizza because of the charred crust!!

Have you considered putting your pizza steal on the grill to maybe even out heat on the bottom while also helping prevent sticking? It could potentially work on more grills too.

You can buy a pizza box (cover) for this weber spirit grill. Additionally, you can combine a pizza stone under it. A steel would work, but brown or burn the bottom too quick. Different textures on a pizza is great, so a super crispy bottom to a more cooked and softer topping isn't bad. It's about personal taste, and I like both versions of it.

Looks great. I've got to try making it. I am wondering if there are any tips/tricks for making this for a larger group. Like either pre-rolling the dough and keeping in the fridge between parchment or par cooking the crusts before the guests arrive.

Hey Bri, I have cooked pizza over a wood fire camping for more than 10 years. I would cook one side and flip the dough. Add cheese and heated sauce and finish cooking.

I do my pizzas on the grill. I use a pizza steel, heat it up before putting the pizza on. I also have chunks of wood surrounding the pizza which elevates temps to 900 degrees. Its done in a couple minutes and tastes just like a wood fired pizza.

I agree about the oven in the summer, especially at 550 for a couple hours. So just throw my pizza stone on the grill and bake as normal.

I rarely turn my big oven on in summer, I have a Brevill convection toaster oven I use all the time, definitely going to try this on the grill, I'm in the Lou too and it's been soo hot, about the only thing I do outside is cut grass and water my garden, and now GRILL PIZZA 😉

I'm the same when it comes to summer and not using the oven but I have a nice Breville toaster oven and have perfected a pizza recipe for that so at least it's less heat. Comes in handy when I don't feel like using the grill.

@@Baribrooks Nothing too crazy. I just make my own dough or use store bought to start. I also use the black pan that came with the oven and be sure to use the pizza setting with no convection. To make spreading the dough easy oil the pan and then I spray some oil on the dough and put plastic wrap over it and use my hands to spread it out. The wraps makes that really easy. I let the oven preheat at 450*F and cook for no more than 10min and it's ready. I've also begun taking the pizza off the tray for the last 2-3min to get more char on the crust the way I like it.

Hey Bri, for those of us with different grill models, is there a temperature we should be shooting for? I believe almost all modern grills have a temp gauge on them but low, medium and high gas settings are pretty subjective. Can't wait to try this. Thank you!

I've tried this with a previous grill and could never get the top to cook enough. I have been tempted to put my pizza steel on the grill and try to make a grilled bar pizza with a bar crust and 50/50 cheddar/mozz mix and just peppers and onions with no meat. This could be this weekend's project, I also love Calabrian peppers so that could be part of the equation.

I love grilling pizza. I oil the dough and put that size down on the grill. Oil the raw top and flip when cooked. Then sauce and top pizza as the bottom starts to cook. Close the lid until done. Gonna try this style next time

EvenEmbers grills have the porcelain-coated cast iron grates like the Weber shown here and *4* 12000 BTU burners. Can't seem to find 'em anywhere but Tractor Supply, but they're fabulous and impossibly inexpensive considering the solid build quality. My base model's fire box exceeds 600 and even that part is porcelained so it'll never peel. I'M NOT A SHILL! I just feel like I possess secret knowledge I can't not share with cooks on a budget. Like when I found the Mercer BPX 8" chef knife that changed my life (get one). HEY BRI! At some point in the last year you became my go-to YT guy for techniques and ideas. Super solid stuff bruv!

Ha! I'm not the only one to think of grilling pizza then lol. What i like to do is let a pizza stone preheat inside for 5-10 minutes until the surface is 500 ish degrees and cook it for a few minutes. Comes out pretty similar to a pizza oven in my opinion. Oh, and it prevents any and all potential sticking

I make pizza on a Traegar pellet grill. My neighbor has one of those trendy pizza ovens. In my opinion they're more trouble than they're worth. I'm going to try your dough recipe.

Love grilling pizza in the New England warmer weather. The flavor of just the average gas grill is fine but a coal/wood old school potbelly?..mm mm mm the notes from the wood n bit of smoke. Chefs' kiss (Gas grill -You can soak some fav wood bits and put in a foil pack to the side for same'ish effect)

I agree with the pizza oven being a pain in the a**. I own the expensive one and I’ve used it like twice. Way too much attention needed. Gives good pizza, but the effort is 10/10. Stoked to try this recipe. My grill doesn’t have those flat style of grate, is not the “Weber tiny round”, it’s a thicker upside down V type deal, will that work?

Another level of awesome is pizza on a charcoal grill. A lot more tweaking but if you know how and where to control the temperature, lower and upper vents even cracking the lid a little, or a lot, it's a little smoky and great.

If you have a kitchen torch, you can add some color and browning to the cheese that way after grilling -- though you must avoid the basil leaves! :)

Have you ever used the bread proof setting on a gas oven? Is it worth using? I have a gas oven for the first time and I would like to use the setting, but it seems intimidating! Love your videos!

I'd pull the grill grate off with tongs to spray oil on it, there's a risk of flamethrowering oil if you spray into the burners / coals
