I think I struggle with the grind. I have the Encore grinder. My coffee is not that great and I haven't been able to figure out why. I think it's giving me the right brew time - around 3:30 to 4:00 - but it doesn't taste anything like when you guys make it. It's been discouraging. I play around with the grind setting, but I can't seem to get it right. Once this covid madness is over, I'd love for Vigilante to hold a grinding/pour-over brewing class!

Water can make a difference as well as temp. I know that here in Silver Spring the water can sometimes be noticeably chlorinated, especially after periods of heavy snow or rain. A simple Brita pitcher can fix that, at least in our experience. Not speaking as an expert, but definitely a couple of things to keep in mind.

Don’t fret! This little learning curve is something all coffee Aficonados go through on their way to achieving a great cup. As the fellow in the comment section below suggests take a look at 1. Your water (are you using filtered water?) and 2. Your brew temperature (you’ll want to be in the 200 degree Fahrenheit range). These two factors can also play a huge role in getting that delicious cup

@@VigilanteCoffee I have used Brita, and now have been trying spring water. But see my reply to the other person’s comment. Maybe my grind setting is way off? But brew time seems about right?

Regarding the Baratza grinders, what setting do you recommend for pourovers?

Typically between the level 9-14. Adjusting as you see fit for best taste!

@@VigilanteCoffee hmm. I’m currently at 24. I kept going coarser. Do these vary a lot or am I way off the mark? Brew time seems right, but the coffee isn’t
