KRISTEN'S MARRY ME CHICKEN PASTA RECIPE:
What you need:
8 boneless skinless chicken thighs
salt, pepper, garlic powder, onion powder & paprika
extra virgin olive oil
2 heaping tablespoons of garlic (fresh or jared)
3 heaping tablespoons of sun dried tomatoes
1 tablespoon thyme (fresh or dry)
1 tablespoon rosemary (fresh or dry)
1 cup chicken broth
2.5 cups heavy whipping cream
1 cup shredded parmesan cheese (fresh or pre shredded)
1 lb cooked pasta (I prefer penne)
1. Pre-heat oven to 400 degrees. Cut excess fat from chicken thighs and season both sides with salt, pepper, garlic powder, onion powder and paprika. Heat OVOO in large oven safe skillet *preferably cast iron (if you don't have one thats ok too just use a large skillet) and add chicken thighs to skillet. Cook for 4-5 minutes on each side on medium high heat. Transfer to a plate and set aside. Remove skillet from heat.
2. Using a paper towel, wipe out skillet (not completely, but enough to get excess oil). Return skillet to medium-low heat and add a drizzle of EVOO. Add garlic, sun dried tomatoes, rosemary and thyme. Stir continuously to bring flavors together being careful to not burn the garlic (1 minute). Add chicken broth, heavy whipping cream and parmesan cheese. Stir continuously and raise heat to medium. When sauce thickens and begins to bubble remove from heat and return chicken thighs to skillet with sauce. (if your skillet is not oven safe, place chicken thighs in a baking dish at this point and pour sauce over chicken). Place skillet in the 400 degree oven on the middle rack to bake for 20 minutes.
3. Boil a large pot of water. Cook pasta according to directions on the box.
4. Meanwhile, when chicken is done in the oven, remove chicken thighs from sauce and cut into strips, and then cut strips in half on a cutting board and return to sauce. When pasta is finished cooking, drain and return to large pot. transfer chicken and sauce to the large pot with the pasta and stir to combine. Garnish with some parm cheese on top and whatever sides you see fit! Enjoy!
