For your questions: multiple registers are more useful for multiplayer. There is no employees for now in the game. Also, at the time of your reccording, there was a bug that put back customer count to level one when you got out of the game (each store level gives +2 max customers in the shop). It has since been patched so you should be ok now to have lots of customers (and enjoy knowing what's in your boxes easily)
