Hi, I'm Mexican and amaranth is a very common grain here, however I am just starting to know the plant itself that grows everywhere and are sadly treated as weeds... Just like leaves and seeds, Amaranth stems are also edible.. just lightly peel and cook with spices of your choice.. awesome fiber content!

I cook Amaranth: Sauté some onions, add some diced sweet pottatoes, clean amaranth leaves and some fresh shrimp. Add pinch of salt and cook under low fire. Bon apetit !

What a super plant that is. I tried sowing it 2 years in a row but i think both years, the weather did not cooperate. I bought a packet of a variety called 'molten fire'. Very beautiful. I hope i can eat it, probably. :D I'm also hoping to sow quinoa and chia next year. See how they do.

Just happened that I picked up a seed pack from Chinese grocery store and sowed some seeds on Sept 3rd. So far most of other seeds sprouted but none of the amaranth has. I'm really excited that they're super food. Hopefully I'll get some this fall.

thank you. so when the plant grows after cutting the top, it will become more bushy and can you still do cuttings on the side shoots till it is not bolting?

Yes . We get cuttings one plant as of 8 times.after cutting Drench cow urine that dilutes with water in 10 times. One liter cow urine with 10 liter water. You get lots of tender leafs .

I grew amaranth for the first time this summer and the tops of the 5 foot plants are fuzzy and the seeds look nothing like the ones I planted. Do the seeds take long to mature? how do you collect the seeds? I wish that was in your video.

In zone 8, grow amaranth as a warm season crop. Or as microgreens. They grow pretty fast, but they really love heat. I just let them go to seed in zone 8b. They die in the winter and I spread the seeds around. In spring, tons of amaranth comes up all over the place. They are beautiful and very reliable.

40 days and your harvesting??!!! Mine took forever. Well 60 days to the size of your 40. And how you took seedlings out of your soil?, I cant get my soil that loose. I spared no expense making my potting soil with peat, compost and perlite. I always tend to get like a "cap' on the surface that I occasionally have to break up. I may be using to much peat. I also throw some lime and fertilizer in my mix also. 2-2-2. Great video, Im growing loves lies bleeding, Cant wait till they flower.

It can be eaten raw in salads or cooked. We usually stir fry it with spices (turmeric powder, chilli powder, salt) and then add grated coconut and cook it. Tastes great with tortillas or rice!

it looks similar, except for the color, to a very commonly eaten vegetable we call calaloo in Jamaica. Calaloo is green.

Hi Dawnett, Amaranth is the original name. They said that there are 26 species from the amaranth, and the green Calaloo, is one variety. Jamaican eat the green kind, and Indian loves the purple kinds. Which Jamaican referred to has wild calaloo.

The heat shouldn't be a problem, but it may be too dry in Saudi Arabia. Amaranth is fairly drought tolerant, but I'm not sure it is drought tolerant enough to be considered a desert plant.

Try the green variety of Amaranth... they are very heat resistant and grow well in hot conditions. I work in the Middle East as well and I have had great success with Green Amaranth.

Só I’ve let red root amaranth grow in my garden, thinking I’d make a dish out if the leaves sometime. The other day I downloaded this app that identifies plants, used on the amaranth, it identified it as red root amaranth and it says that it is poisonous for both humans and livestock, that it can be eaten in small amounts, but that it can be deadly if livestock feed on it for several days. A Google search, however, doesn’t mention anything bad about the plant, that it is edible. I’m a little confused. So I started pulling all the plants I let grow on my property. My question is, how is red amaranth different? Is it poisonous in large quantities?

errr.. a 2min quick google search tells us that red amaranths have high oxalic acid, which can cause kidney problems in human & livestocks, if taken in large quantities. the smaller shoots have less. boiling helps reduce it. just eat it moderately

Soil pH 5.6 to 7 required for better yeld . And they loves nitrogen. Don't add so much of potash
