6:38 is actually because the plane is not moving until you approach the back opening, then it starts to move in the scripted therefore you will be thrown out and even clip trough the frame. the crash fail cutscene is only triggered if the plane is floating for a cretin amount of time (I believe around 30 sec), that's why you will always end up jumping from the same height.

Yeah, you’ll get a text or phone call like that whenever you shoot at another character’s safe house. But he was specifically talking about getting a message for sneaking around, not shooting. Actually now that I think of it the strip club is Trevor’s safehouse late in the game, and I’m not sure if you get that kind of message for shooting at it.

On the sitting NPC death one, NPCs that are "unable" to stand back up after being ragdoll-ed are considered "dead" the same works if you manage to stand on them. Seats and benches aren't a "flat ground" and can't trigger a stand up animation and the game knows this, so they die.

Yeah the request to stop sneaking around and firing Rockets at their safehouses happen to all of the houses. With Michael he will even call you to yell "Stop firing Rockets at my house!"
