Its impossible to land perfect in moving object, since characters got set to fall when climb vehicles.

do I have to win a gold medal to get the game out 100%?

no you just need to win a medal. Besides, you only need to complete them with a protagonist (with a medal) to work towards 100% completetion. I suggest you should complete it with Michael and Franklin to max out their flying skills. Doing this task with Trevor, however is not neccessary since his special skill is already flying.
