I knew this would be awesome. In West Africa, Nigeria to be specific, we have a dish called Suya - it's basically beef coated in a peanut blend, with chilli and spices. You should try it and add your Guga touch!

It makes sense that the peanut butter steak would be tender. Peanuts, like other legumes (beans, soybeans, peas, etc.) contain phytic acid, which, is an acid. Acid breaks down the long proteins in the muscles. So... soft meat.

@Punished Aniquin Yes, eventually. But oils become more viscous as they cool. Peanut oil actually freezes at 3 degrees Celsius, which is at or just below refrigerator temperature. So peanut butter separates much more slowly under refrigeration than at room temperature.

@@dfeuer Oil also keeps the water trapped since they dont mix or exchanges places with it in food when heated in high temp for example frying at higher temp or cooled in the fridge. Meaning the more water and oil combination there is, the more separation, it`s more about the quantity then the temperature

Guga, there is a test I would love to see, but it could get a bit expensive. I'd love to see a comparison between the Umai bag dry age vs a proper dry aging refrigerator like many butcher shops use. I suppose you could just buy dry age steaks and then age in Umai for the same time, but to truly make it fair having your own dry age fridge and taking the steaks from the same cut of beef would be ideal. Peanut butter goes with honey, honey has enzymes that act like pineapple, two of my favorite videos on the channel are the peanut butter and the pineapple experiments, mixing peanut butter and honey together for a steak would make an interesting video.

There is always something to learn: Peanut butter aged steaks become very very tender. best test for peanut butter would be the cheapest and toughest meat you can get off a cow and see the outcome.

@@darthphoneix I happen to eat peanut butter and have found over time certain things. Peanut butter does not breathe, but it is viscous. that's why you need to turn your bottle 90 degrees every week, otherwise oil will be pushed out and 1 part will dry. So your idea of thick or thin is valid. but more to the point, meat to tender was a noted point in the video. that's the first documented issue.

Jonathan Faulhaber sure, it’s not too complex. Let’s take a steak. You’d put it in the ziplock bag, then slowly lower the bag into the pot of water till the bag is most of the way in. By doing this, the water will force most of the air out the bag. Then you just zip the bag. If you watch Binging With Babish’s Basic series, he goes over Sous-Vide for cheap if you need a visual. Now I’m not sure if this same technique works for Umai/Dry Aging bags like Guga uses since I never tried it with those bags.

You would use mozzarella cheese. You can make it at home, encase the steak in it(because it's a soft cheese) and it wouldn't cost you much money. The problem is bacteria. Cheese relies on bacteria, and that bacteria may excrete something toxic when it consumes a meat. That's another reason to use mozzarella. It has minimal bacteria, and no aged bacteria.

It makes sense that the meat was not able to dry age when jiffy has preservatives in it. Perhaps organic there may have given better results. But I don’t think it would be worth it.

It's about as special as any other kitchen appliance you can pick up from your local Walmart. But, it's not intended for dry aging, it's intended for food preservation. That's where the Umai bags come in. They have these inserts that allow you to seal the bag using virtually any commercial vacuum sealer, removing the air in the bag and allowing the porous membrane of the Umai bag to release the moisture inside.

It's a lot easier for those of us who want to try, but only have a fridge. Another thing is, these are experiments, it's not meant to be like the regular way. And it's a good thing that he actually uses all his meat, and usually eats it unless it's moldy or something. But I can see where you're coming from, but, it's pretty interesting.
