I suspect the tendency to discourage bacterial growth might hinder the aging process, or even lead to the growth of undesirable bacteria over the desirable stuff. Then again, could be the opposite. Would be an interesting--if pricey--experiment. (Especially if agar cultures are taken during/after to identify the bacteria types that develop!)

Nutella is mostly sugar... so when you coated the steak, any bit of bacteria and/or fungi had an all you can eat buffet right around it. When the Nutella dried out (which happens even faster in a refrigerator), it probably cracked and oxygen got in and they started feasting.

The meat was decomposing and the mold had started to break up the proteins. That made it more soft. But eating it is not good. One time wont kill you, but better dont duplicate that Never seen a dude with that much passion for meat though

It sounds to me that that Mould got real deep and personal with that steak. What I think happened is that the nutella actually kept the moisture in instead of letting it out. and since the steak was never dried it never firmed up and allowed the micelium to penetrate all the way into the steak instead of staying in the surface like other dry aged meats and hams and started digesting it in its entirety, that's why it was so tender. What you described as trouffle-like flavor was the mould body itself. What I think saved the steak was that the mould quickly took over and produced penicilin, preventing other germs to rot it.

This resulted in a layer of moisture between the meat and the nutella where the meat juices collected and can't escape from. It was literally a recipe for disaster.

Yeah, I think the peanut butter one worked cause there's a decent amount of salt, but it looked like the nutella just formed a sweet moist seal around the meat and let it start moist rotting rather than dry aging, which obviously is not what you want.

I seriously advise against eating anything organic and juicy which has mould spores growing on the surface. Mould also travels through the juices into the center of the meat, vegetables and fruit. Unless it has been specifically created with mould desired like some cheeses it is likely to become toxic.

Nutella is not "wet," it's mostly oil. *BUT,* that's exactly the reason why the dry aging doesn't work. It prevents the water in the meat to come out. It basically works like a vaseline

Cutting off the mold is not going to make it "Safe to eat", the mold will have spread throughout the entirety of the meat. That's also why you throw out the entire loaf of bread, if there's mold on only one of the slices. The mold spreads throughout.

Yes that's why u had to cook em properly and the toxic spore from the fungus does not penetrate deep into the meat so searing will kill most of the harmful stuff and become edible

That's really subjective. It Depends on how much mold and the kind of mold. A little mold on the crust isn't going to affect the bread beyond that, but A LOT means it probably has penetrated. That said, I wouldn't have bothered cooking this steak after seeing that mold.

Even if its a little mould on the crust of a bread, its a clear sing that the mould penetrated it and started "blooming" (the white-green mouldy apearence is the reproductive body of the fungus). Its the same thing for the meat. Also, in the video the meat has literaly little mould "popcorns" insteadof the common "carpet pattern we normaly see

When dry aging in something as thick as Nutella, you have to have one side or at *least* one side uncovered so it doesn’t trap all the moisture within. You got the moisture trapped inside and it started moulding and rotting.

So what happened: Sugar from Nutella was feeding molds and they grew substantially, then mold enzymes dissolved the meat a lot. I'm personally against this kind of stuff, might turn out dangerous.

@Taha LetsPlay cooking spiled food doesn't always make it safe to eat. Some molds and bacteria produce toxins as a waste product and those toxins don't always break down when you heat them.

There is one problem with this one: It didnt dry aged, so it created fungus. The liquid inside the meat couldnt get out because of the hardened nutela, and that "sweat" is probably not even 10% of the liquid that should be out of the meat. If it created fungus but it was dry aged correctly it would be eatble because fungus need liquids to grow, so they would have grow just on the outside

@@marcosdheleno nuts draw water out around them and from the looks of it the peanut butter one was still quite soft so would allow moisture to still get through while nutella had become completely solid not allowing any moisture at all to leave. this might have been a case where leaving a few spots for moisture to escape would have been the best idea, its also why alot of dry aging is done on racks so gravity can pull the moisture out of the meat

@@xristos1857 The high sugar content in Nutella created a good environment for fungi to grow and thrive in when oxygen got in . The juices are leaking out so clearly there are holes allowing oxygen to enter and fungi to grow and eat around the meat. Its literary in its very early stages of decomposition. Be careful - Aflatoxines can migrate into the meat and are not destroyed by heat. They are extrem heptotoxic, even in very low doses! Stay safe.

If you said it tastes like it was dry aged for too long, then try 2 more. One for 12 days and the other for 24 days. I think the sugars molded and quickened the dry age process.

I agree, the mycelium of the mold would have at least penetrated at least 5mm into the meat, and its toxins to break down the meat would have gone much further. It is incredibly unsafe to eat the meat at that point because the curing process has transitioned from a controlled rot to an uncontrolled rot. The chemicals produced by the mold may even be the reason it came out so tender.

Just removing the mold is generally not realy a good idea. The "roots" of it are most likely still in there and they can be unhealthy.

The “frutification body”, the fancy name for the part we actually see of the mold, can only appear once its hyphae (the “roots” of the fungus) have dominated very single inch possible of the substrate where they’re growing. So yeah, there’s still plenty of “truffle” all over that meat, Guga, don’t worry
