One of the best deep fried foods I’ve ever made was wild game deer blackstrap. Hunt it yourself, let it age for 2 week minimum. Cut into 2 inch cubes, use flour, pepper, cayenne pepper, garlic powder, and a small amount of salt as the seasoned flour and double dip it between the flour and egg wash. Cook for about 3 minutes on 375 degree oil. A tasty sauce to serve it with is a red wine sauce.

I’m so late to this but this video is awesome. Guga said it multiple times, but honestly I think the best way to cook all seafood is to deep fry it. Love me some pork belly! Cooked with homony and spices. I think it's called manuto. Usually made with tripe (cow stomach I think) Any way, it's great! Several relatives used to make it but I never got the recipe. Sadly, most of those relatives are gone now. Ate a lot of stuff growing up that most folks today wouldn't touch or have even heard of. As a former fish monger, warm water tails, like Guga cooked, tend to be larger. However, they are not nearly as flavorful as cold water tails. Cold water tails are much sweeter. Also, the larger the tail, the tougher and less flavorful it is regardless of species. That tail was cooked perfectly though. I’d also add that inserting a skewer through your tails will help to keep them from curling up as well if your nervous about holding down a tail or cooking more than one at a time.

Wagyu fat burns at a pretty low temperature. Deep frying is using oil that is over 300°. You’d have to confit stuff in wagyu fat to prevent it from burning.
