A fully aged cheese is usually very low in lactose. I don’t think that American cheese is aged much if at all, and a slice has about a gram of lactose. A typical Cheddar has 0.1 gram or less of lactose per ounce, much less likely to cause trouble.

MSG is a lot like salt, it definitely brings out other flavors, but on its own, it doesn’t add a lot of complexity of flavor. The umami powder instead isn’t _just_ MSG, it’s full of all sorts of other extras that add a complexity of flavor rather than just umami alone. Just remember: salt and MSG can only do so much for a food, you gotta have other flavors there also!

Do grilled brisket tacos (the best) 1.) Slice raw brisket thin 2.) Season with season all or lawrys 3.) Grill on high heat (watch for flare up's because of high fat content) 4.) Using a clever chop meat (because of toughness) 5.) Serve on grilled corn tortilla (chopped onion, cilantro, lime, and salsa opcional) Creamy green salsa (most people think it has avocado but its a lie) 1.) Grill 5 jalapenos 2 serranos 2 cloves of garlic and a 1/4 onion 2.) Once charred blend everything together 3.) Crucial step slowly drizzle canola oil while blending to emulsify (if oil seperates stop and remove excess oil and reblend) 4.) Add salt to taste (even though it has a lot of peppers it is not a very spicy salsa. Really creamy in texture)

Guga, your killin me with all these recipes. I lived in Japan for 18 years, Umami powder is an everyday seasoning. That being said, I've never tried it in burgers but that will end soon. Thanks for the tip. So looking forward to trying this. (Sidenote) not to keen on vegimite, to darn salty. Overpowers the natural taste of the meat. Oh yeah, forgot to mention, Angel's beard is coming in nicely.

I can attest to the umami powder working well with a burger. I also added Montreal steak seasoning and cayenne pepper for one of the best burgers I've ever eaten.

Keep the Montreal light as it can easily overpower the beef. As for the cayenne, that depends on how spicy you want it but I don't personally advise more than - say - a quarter of a teaspoon or so. Again, the goal is to not overpower the beef's flavor.@@NoCapJustFaxts

I am so happy you are not afraid to use MSG in your cooking. The 1980s Chinese restaurant scare ridiculously removed MSG from cooking (even though soy sauce has it lol) but the fact is, you can't replicate umami flavor with anything else. Only 2% of people are allergic to MSG and get headaches (people are allergic to cilantro, too, but we never hear about that). Also, people sometimes claim that MSG kills brain cells. Well yeah, it does, but not the ones that can't regrow (i.e. the ones that alcohol kills)...I think people don't understand how chemicals and brain cells work. At my home, I have a salt shaker, a pepper shaker, and an MSG shaker on my table. I prefer Aji-no-moto brand.

They're the same thing. MSG is the molecule that is responsible for the umami taste. The Umami powder he used is just roasted mushrooms, which naturally contains MSG (on top of it's own flavors). Adding extra MSG to the powder won't have any additional effect.

LPT: Vegemite does wonders in mashed pumpkin and can be dehydrated into powdered form for use in cooking.

I'd recommend using a better American cheese like from Boar's Head or even Kraft "Deli Deluxe" slices, over the Kraft Singles. Still has that great melt, with a higher ratio of actual cheese.

I love the Uncle Roger "king of flavor" reference 👍🏼 I love this channel. It makes me miss home, and reminds me of many of the crazy creations "Jorge" (George) would make at Pompano Beach Hops back in the day. Keep up the great videos.

I always get 10% of the weight of the beef in raw mushroom, blitz it in a blander and mix it in so you get the umami but also the juices coming out as the burger cooks

instead of marmite/vegemite u gotta try "vitam-r" its the german version of those and its much better and no im not biased cuz im german and grew up with it - didnt know it until just recently when i tested several yeast extracts and vitam-r simply was the best

Here in Sweden the burger chain MAX has been serving the umami burger for 4 years now , it rapidly became my favorite, served with pickled red onions ,truffle sauce and bacon. Worth trying for all tourists visiting the country. 😉

I was fighting it for so long, always using cheddar, pepper jack, etc and finally admitted to myself that yes, American cheese is the best cheese for a burger. Another fun video, thanks!
