Hey, he's a good cook and invested a lot into his craft and youtube channel. He deserves some recognition from companies wanting to promote his brand and cooking methods....it helps THEM, in that he promotes their wares. Win Win situation. Yeah, he MIGHT be spoiled (I don't think he is, he came from humble beginnings), but after years and years of research, he deserves the rewards, IMHO. Good for him. Hard work pays out.

Coffee salt is actually a very good method. In Korea, we put coffee onto pork belly to make it more tender.

Guga, if you want to be serious about finishing salt, you have to try "Fleur de sel" (Salt flower) from Guérande, France. And if you like potatoes and cheese (ok who doesn't?), you have to try those two French recipes: Aligot : mashed potatoes with fresh Tome cheese and cream. Truffade : fried potatoes with fresh Tome cheese melted with them. You should be able to find the recipes online or even buy some premade, though it is always better when freshly made. And if you ever come to Paris, let me know, I know where to have some good ones.

@@GugaFoods FEEDBACK: My 1st dry-age was a success! However I will add this....Of course I had several cut steaks which I divided into two separate grill sessions. The first time I did it as shown in the video with seasoning only salt & pepper. It was good, and we got the dry age experience. The second time, I marinated and put my personal seasoning on the dry-aged steaks, it was amazing! The dry-aged must have absorbed the marinade more so than normal, as well as the seasoning; like it was somehow a super sensitive steak. Unless you know, which wouldn't surprise me, I just may have one-upped you my friend! (no disrespect, much love) 😉💖

Looks good! By the way, I'm pretty sure you've tried this already, but get your hands on some kiawe(Key-ah-vey) wood, it's a subspecies of mesquite that grows in Hawaii, and is probably the best wood I've ever cooked a ribeye with! I personally just threw a small log of it on before I would start grilling, but you could probably just chip it up or get a sawdust out of it and get a good result, the important part is getting the flavor of that heartwood into the meat, and I have NEVER had a steak at any restaurant, food truck, or mainland barbecue that could match up to that perfect flavor!

I made spicy salt using sea salt mixed with Dave’s Ultimate Insanity Sauce, placed on parchment in my dehydrator overnight. Definitely adds a helluva kick! Also, salt with citrus (lemon, lime, orange) zest is amazing.

Really love the videos. Would like a series of videos on how to make cheaper cuts of steak taste great WHILE keeping the cost at a minimum. Not everyone can afford rib-eye or Wagyu on a daily basis or afford to just mix Wagyu fat into the cheaper steak lol. The rest of us peasants need to settle. It doesn't even have to be steak, just different cuts of "cheaper" meat. Love the series, keep it up

Finishing salt is also called flower of salt. It's primarily made in Portugal, Spain and South of France. It's the top layer of the evaporation done in the salines

I also make smoked salt (fleur de sel), and have settled on smoking it at about 160 deg over hickory, and each hour I spritz lightly with white wine, give a stir and spread it back out evenly. And perhaps the most important part is to leave the salt in the smoker after your done until the next day. The wine helps attract and hold the smoke, and as it evaporates it leaves notes of it's sweetness behind. Remember, this is a finishing salt. You can cook with it if you chose, but it will lose it's smoky flavor. And besides food, this is great to salt the rim of a bloody mary, and most citrus based drinks.

My favorite is diamond salt. all you need to do is basically grind some large pieces of diamond and there you have it. It's shiny, smells of luxury and only rich people can eat it (because they can afford to get a new set of teeth).
