Guinness's business model used to be selling the books, so they were incentivized to keep the categories interesting otherwise the books wouldn't sell. But because of the internet nobody buys those books anymore, so Guinness had to shift strategies. A friend of mine holds the Guinness World Record for longest career as a gravedigger (72 yrs) and when he started his job, it was settled with a handshake not paperwork, and Guinness wouldn't accept that, they needed a document to prove it, so my friend's brother, who was about 12 at the time my friend started, had to sign a paper saying he was there when it all began. It was the biggest pain in the ass for him to get in the book, but its pretty cool for everyone who knows him.

I believe they don’t record records like that because it endangers lives and they don’t wanna promote pursing a record breaker. For example, although Andre the giant likely holds the record for most alcohol drunken in one sitting (his size has reportedly granted him the ability to drink as much as multiple liters without death) Guinness refuses to document that out of fear that people would die of Alcohol poisoning trying to break it. Sad but sometimes they do have to act responsibly. Though I would love to see them document those kinda things under a “do not try to break these records” category.
