You make the best jazz backing tracks hands down, but the chords in the backing have more extensions than what is written . Example : the f7 chord is more an f+ chord and many of the dominant chords have the 13 in them. i know that jazz is all about intrepetations but is it by choice ?

Yes of course ! This is standard in jazz comping. And F+ is because of the notes of the head of that tune :-)
