Hi, Ellen! This Gullah crab rice looks amazing! Like you said, it would work as either a side dish or even a meal in itself, so it's super versatile. I think the addition of tomato added both color and flavor, so it was a nice touch. I also like cooking with a butter and oil combo, too--and cast iron never disappoints. Thanks for sharing!
