I love how at the start Gus is clearly guarded, there's a long shot of him glancing down at the bottle rather than listening as if anxiously waiting for it to be poured and the conversation over, but gradually he stops glancing and gets enthralled on what's being said. Awesome that the waiter describes the wine that Gus drinks as meaty and bloody. Gus takes a sip of that wine and remembers sangre por sangre. Blood for blood. Theological and biblical imagery isn’t uncommon in BCS at all. Saul meets Kevin to argue about settling the Mesa Verde case on Level 8 of the building in “Wexler v. Goodman”. According to Dante’s Inferno, liars are put into the 8th circle of Hell. Saul invokes Christianity several times in his schemes.
