DHABA STYLE DAL KHICHDI
INGREDIENTS FOR BOILED DAL:
• 1 tablespoon Ghee
• 1 tablespoon Cumin seeds
• 1 cup Toor dal (soaked)
• Water, as required
• Salt, to taste
• 1/2 teaspoon Turmeric powder
• 3 to 4 Green chilies, slit
• 1 teaspoon Ginger, sliced
FOR DAL KHICHDI:
• 2 tablespoons Oil
• 2 whole dry red chilies
• 1 tablespoon green chilies, chopped
• 1 tablespoon Ginger, chopped
• 1 tablespoon Garlic, chopped
• 1 cup Onion, sliced
• 1 cup Tomato, chopped
• Salt, to taste
• 1 teaspoon red chili powder
• 1 teaspoon Coriander powder
• 1 teaspoon Cumin powder
• 1 teaspoon Garam masala
• 1 teaspoon Turmeric powder
• Boiled Toor dal (from above)
• 1 cup boiled Rice
• 1 teaspoon Kasuri methi (dried fenugreek leaves)
• 1 teaspoon Lemon juice
• 1 tablespoon Coriander leaves, chopped
FOR GARNISHING:
• Fried onion
METHOD FOR BOILED DAL:
• Heat ghee in a pressure cooker. Once hot, add cumin seeds and soaked toor dal.
• Pour in water and mix well.
• Add salt, turmeric powder, slit green chilies, and sliced ginger. Stir to combine.
• Close the pressure cooker with its lid and cook for 2 to 3 whistles on medium heat.
• After the pressure releases naturally and the cooker cools down, check if the dal is boiled properly.
FOR DAL KHICHDI:
• Heat oil in a pan. Add whole dry red chilies, chopped green chilies, ginger, and garlic. Mix well.
• Add sliced onions, chopped tomatoes, salt, red chili powder, coriander powder, cumin powder, garam masala, and turmeric powder. Stir to combine all ingredients.
• Add the boiled toor dal to the pan. Mix well.
• Incorporate the boiled rice into the mixture and gently mix.
• Add Kasuri methi, lemon juice, and chopped coriander leaves. Mix everything together.
• Cover the pan with a lid and let it cook for about 5 minutes.
FOR GARNISHING:
• Once done, transfer the dish to a serving bowl.
• Garnish with fried onions.
• Enjoy your delicious Dal Khichdi!
