和菓子で作る桜にじゃれる猫たち
Cats Playing with Cherry Blossoms Made of Japanese Confectionery
花いかだにじゃれる猫を、浮島、錦玉、練り切りの3種類の和菓子で作りました(*๓´╰╯`๓)
🌸レシピ
◆浮島
A
　桜あん 100g
　卵黄 1個分
　上新粉 12g
B
　こしあん 100g
　卵黄 1個分
　上新粉 12g
卵白 2個分
グラニュー糖 15g
◆錦玉
寒天パウダー 3g
水 300ml
グラニュー糖 150g
天然色素 適量
◆練り切り
練り切り生地 40g

１．浮島を作る
A、Bをそれぞれ混ぜておく
卵白にグラニュー糖を加えてしっかり泡立てメレンゲを作る
メレンゲを半分ずつAとBに加えて混ぜ、
型に入れて強火で10分、中火にして20分蒸す
蒸しあがったら型から外してラップをかけ冷ましておく
２．錦玉を作る
鍋に寒天パウダーと水を入れて煮立たせる
グラニュー糖を加えてまた煮立たせる
少し冷めてきたら天然色素を加えて青く着色する
１の浮島を半分に切って型に入れ直し、寒天液を流し入れる
３．練り切りを作る
ピンクに着色した練り切り10gと白の練り切り10gを
マーブル状に混ぜて麺棒で伸ばし、桜の型で抜いておく
白い練り切り10gに茶色、黒、グレーの練り切りで模様をつけて
猫の形にする
桜と猫を飾って完成

◆Ukishima(Japanese sponge cake)
A
cherry blossom flavored bean paste 100g
1 egg yolk
rice powder 12g
B
red bean paste 100g
1 egg yolk
rice powder 12g
2 egg white
granulated sugar 15g
◆Kingyoku (Agar gelly)
agar powder 3g
water 300ml
granulated sugar 150g
natural food coloring to disired color
◆Nerikiri
Nerikiri dough 40g
natural food coloring to disired color

1.Making Ukishima
Mix A and B separately.
In a separate bowl, whisk egg whites with granulated sugar to make stiff peaks meringue. Fold the meringue into A and B, half in each, then pour the mixture into a mold. Steam over high heat for 10 minutes, then reduce to medium heat and steam for another 20 minutes. Once done, remove from the mold and cover with plastic wrap to cool.
2.Making Kingyoku
In a saucepan, bring agar powder and water to a boil.
Add granulated sugar and bring to a boil again.
When slightly cooled, add natural food coloring to turn it blue.
Cut the Ukishima from step 1 in half, then place it back into the mold and pour the agar mixture over it.
3.Making Neri-kiri
Mix 10g of pink colored dough with 10g of white dough into a marbled pattern. Roll it out with rolling pin, and cut them out with a cherry blossom mold.
After making a pattern with brown, black, and gray Nerikiri dough on 10 g of white Nerikiri dough, make a cat shape.
Decorate the Ukishima and Kingyoku with the cherry blossom and cats.
