Big fan of your channel. Made the hatch green Chile sausage - had good flavor but not much heat. Just made this recipe (smoking tomorrow after refrigerating overnight), but the patty i fried up had really nice heat. I’d say you nailed this one. Thanks for sharing.

Some people are just made to be teachers and you are one of them. Excellent video, so well made, easy instructions and you give the watchers the feeling that you know what you are doing. The end result is a beautiful sausage and we have to take your word that it is good and you make us feel that it is definitely delicious. Wow what a great video. I have mentioned before that you have taught me a lot watching your videos and you did it again today. I love Habanero and being from Louisiana I love sausage which we use to season our food along with Tasso and Andouille, I will definitely try this recipe. Thanks again Joe, excellent video.

OMG this looks so good! However, considering the fact that my spicy tolerance has gotten so high that ghost peppers barely affect me, two (or even three) percent habanero just won't cut it for me; I'd have to do a bare minimum of five percent. Ooh! I mentioned ghost peppers; you REALLY need to do a ghost pepper sausage! The natural underlying smoky flavor of ghost peppers would be PERFECT in sausages! Your wife and daughter probably won't eat them since they don't like spicy stuff, but that sounds beyond amazing! I've watched a few of your sausage making videos and enjoyed them all, but this one especially earned my subscription. Great content, dude!

Joe, between you and Bradley from Chuds, I’ve stepped up my sausage game so much it’s incredible. I usually stick to venison/pork sausage until I run out of venison so I adjust the mixture for that but these mixtures are spectacular! Thank you! Thank you! Thank you!

Joe sometimes you mention the grind 4.5mm etc. Most of the time it looks like 1/8 grind? Other then knowing the grind your videos are perfect!

1/8 is smaller than what I'm using but it will work too. The dies I'm using are stamped in mm and it is a 4.5mm that I use. Thanks for watching 👍

Wonderful video. question for you . For those of us that dont have the quantity of Brisket trim around. Would I just sacrifice a brisket for this purpose? Same question for another Receipe using pork fat, Woulld using a pork belly work ? I have noticed your dont use your mixer that much??? Thanks you for sharing cant wait to try this one as well. OK then. Have my Andouilles on the smoker and was looking to find me a nice habanero recipe for some snack sticks. Gonna go with 40% venison, 60% pork butt, add some high temp pepper jack and nitrates then have them on the smoker tomorrow.

Hey Joe! Thanks for making such descriptive vids. I really enjoy them. One thing i have t seen is making venison or beef stix smokies. Ive got about 30lbs of venison that i want to convert into stix. Do you have a video showing that? I know you use different casing vs the hog casing. I would like to see a recipe that you would so do those. Just a suggestion. Thanks again Joe!

I've always been looking for more fruit sausages and have been playing with chicken/apple sausage. I got to thinking that I use apple with pork all the time, so what about a apple pork base sausage. Would love to see what you could do with this. I'll keep tinkering and see what I come up with too.
