In theory, any origami will work, coz the angle is always the same.

@@HoneycombManila i use my metal filter mostly for filtering cold brew but i like your tip to get rid of the fines and i will try to brew more often with it.

Using the Misetto metal filter, I don't sift the coffee. I like the body the fines add to the pour over. I do sift coffee for grind analysis, primarily for espresso. After sifting and logging the data, I do mix all the particle sizes back together, then brew the espresso.

How coarse is your grind? Clicks on the comandante?

I don't have a commandante. On a Timemore C2, it will be around 12-18 clicks

How much coffee do you exactly get from pouring 300ml (g) water in a cup? Are you suppose to drain all the coffee? i make my coffee 10-12g at a time with metal filter and it seems to drain so fast, should the coffee ground finer compare to paper filter?

Expect 2X absorbance from the coffee. Actually, grind coarser than paper for metal filters. You have to have a very controller pour to maintain a good slurry level and keep the device from totally draining.
