Why would I want to destroy my gundam

You do it to make it look battle damaged. A lot of gunpla builders use weathering to simulate grit and grim from past battles or from the environment the Gundam might have been in. You don’t have to “destroy” your Gundam to achieve this look either, you can easily just paint things like rust or paint chipping. People also “destroy” their Gundam for modification purposes or for custom Gundams.
