Sarson ka Saag:
#### Ingredients:
- 1 kg Sarson (Mustard Leaves)
- 500 g Spinach
- 250 g Bathua (Pigweed)
- 1 fistful of Garlic
- 1 inch of Ginger
- Green Chilies (to taste)
- Salt (to taste)
- 3 tbsp Gram Flour
- 2 tbsp Ghee
- Mustard Oil
- 1.5 Onions
#### Procedure:
1. Boil Sarson in a pot with salt and water until well-cooked.
2. Finely chop Garlic, Ginger, and Green Chilies.
3. Add chopped mix to boiled Sarson.
4. Mash the mixture with a spatula.
5. Blend the mixture for a grainy texture.
6. Make a paste of gram flour with water, add it to the mixture.
7. Cook on medium heat until Saag thickens.
8. For tadka, heat mustard oil in a pan, add dried red chilies, garlic-ginger-green chili mix, and finely chopped onions.
9. Roast until golden brown.
10. Add tadka to the Saag and mix well.
Makke ki Roti:
#### Ingredients:
- 500 g Cornflour
- Salt (1 tbsp)
- Lukewarm Water
#### Procedure:
1. Knead cornflour with salt and lukewarm water.
2. Massage the dough for soft and puffed-up rotis.
3. Dust the dough ball with wheat flour and roll thick rotis.
4. Cook on an iron tava until they puff up.
Serving Suggestion:
- Serve Sarson ka Saag hot with Makke ki Roti.
- Garnish with homemade butter and pair with jaggery and radish for a delightful combination.
