Hi everyone. Todays video is about Hainanese chicken rice. Another often requested and very popular dish. I have tried very long until I had a recipe that I liked and I hope you will like it just as much as I do. The rice has a wonderful flavour and the chicken is soft and tastes great. I am malaysian... as a multiculture country (we have malay,chinese&indian) in my country so our food become as one for example..malay people knows and loves to cook and eat chinese chicken rice.. chinese(malaysian) loves to eat and cook malay tradition 'nasi lemak'(coconut rice)..i am malay and really love 'nasi ayam' (chicken rice)..when i saw this video.. i feel want to do this recipe...cant wait for tomorrow... look delicious!

Not the most conventional preparation but once again she has improved the original recipe. The traditional method involves steeping the entire chicken at sub-boiling temperatures in bouillon, however her innovative method of steaming has improved texture and the meat is more tender. This dish is economical and very satisfying. The perfect saturday dinner for a small family. Thank you so much for sharing your talents with us in the USA. Can you please post more videos on how to prepare duck?

Thank you for all of these delicious recipes. They are beautifully explained and I can find most of the ingredients locally. "Authentic Chinese/Taiwanese" food is so much better than the American Chinese food that is so common in the USA. Now I don't have to drive 100 miles into the city to enjoy good food.

It looks delicious, although the recipe is different from the one I follow. I usually boil the chicken to get chicken stock and fry the rice with ginger and garlic, then boil it with the chicken stock. Thanks for sharing!

I'm in the process of making it now. I'm at the air drying with chopsticks over the pot part of the recipe. I absolutely cannot wait to eat this chicken. I still have at least another one and a half hours to wait as I have not even cooked the rice yet. I know it will be well worth the wait though.

+Cheryl S. It was a very long procedure to make Hainanese Chicken but in the end, it was well worth the time and effort. The chicken was juicy and silky on the tongue and the rice fragrant and flavorful with the addition of the shallots, lemongrass and chicken broth. The Sweet Chili Sauce paired perfectly with the chicken. Next time I will begin the process at 9 a.m. not 2 p.m. as it is the kind of recipe that absolutely requires time and planning. You made the process look so easy and effortless but like all things, the process of making it takes practice in order to make it as effortlessly as you did in the video.. Thank you for educating me in the process of making of Hainanese Chicken.

for the rice i stir fried it in frypan with garlic/ginger and oil, then use the boiled chicken soup and cook the rice in rice cooker like u..^^..do try my method of cooking the chicken to see wat is the diff..^^..love your cooking.. love the way u speak ^^

hi, another nice vid^^. Just wanna share with u that i cooked my chicken rice in another style. I boiled my chicken ( i use drumstick cos in japan i cant always find a whole chicken as super market dont sell that ^^;) in normal temp water, with slice ginger/garlic. Boiled it in the water on med heat for 25 mins, immed stop fire, dont open lid. leave it to soak for another 20 mins. take chicken out soak it in cold/ice water for 5 to 10 mins. This way the chicken is super tender.

I am not sure whether I posted any comments to this video but dark soy sauce and chilli sauce (with ginger/vinegar) are used as dips for the chicken; garlic is also added when cooking the rice

Hi :-) it worked out great!! The chicken was still juicy and the rice was so fragrant. But I have to be more careful with the oil next time :D I was a bit skeptical about the Mei Kuai Lu, but it's great with chicken. So, thank you!!!

Hi there, can I ask if this recipe is your original recipe, or is it taken from elsewhere with your own spin? Singapore Hainanese Chicken Rice is cooked slightly differently, at least the versions that I know of. Thanks! (:
