Great job on this. I used to get up early and brown the beef along with the onions, carrots and celery, throw it in the crockpot on low with potatoes and veggies and let it cook. When I got home from work it was pure bliss.

As a diabetic, I can't use flour or corn starch for thickening. I use xanthan gum powder instead. It works very well and does not effect my blood sugar.

I'm actually going to start making my beef stew like this in reference to the hamburger. I could save around $10 by using ground beef from Sam's club. My only recommendation for you to try also. Is using barley. It adds a fantastic flavor, and acts as a thickening agent also. Good old beef barley beef stew.

I had a catering gig last year and went to Sam's club for my supplies, I remember getting told I could only buy 10 pounds at a time due to the run on ground beef because of Covid. Almost got thrown out . Usually a pretty calm dude but that was affecting my livelihood. I love barley as well, love the texture it adds to dishes. Great idea. Hello Chef thanks for the shout out. Take a guess what I'm making for supper tonight. Do u think it can be made in a slow cooker as a alternative means of cooking. By the way I have a suggestion for another recipe if you don't mind. How about making a good old fashioned rice pudding . I tried multiple times and it's always a disaster lol so I have to resort to buying cans. I find a lot of the recipes complicated. I need a easy recipe. Yes this can be done in a slow cooker. Sorry to say I don't really make or like desserts, so I have never made rice pudding, the closet to making a dessert is opening a box of cake mix...Thanks again for watching and being a fan of the show...keep in touch my friend..let me know if you have some other ideas

Vanilla cooked pudding add raisins as cook pudding an your cooked rice,top vanilla..very flavorful an always turns out .maybe chef has easier way but this is what I taught my daughters compared to my way

Why the corn starch slurry? You have plenty of starch in the potatoes. Just mash a few pieces of potato and it will thicken up

@@monfrig6959, My recipe is made almost exactly like Chef John's. I think the reason ours is called gravy and not stew is because we serve it over mashed potatoes, and yes chopped potatoes are still an ingredient in the recipe. I know that's a lot of carbs, but...lol...no excuses. I also just noticed that in my comment above I said we added fresh garlic, chopped cauliflower and broccoli, but what I had meant to say was mushrooms, not garlic. We add garlic as does Chef John, but the ingredients we sometimes add when we have them are mushrooms cauliflower and broccoli.

Mon Frig , I stand corrected. I’ve made gravy that way many times myself with a rue made with meat drippings and flour as well as broth from deglazing the pan and sometimes some added broth and finished with a bit of cream or wine depending on the kind of gravy it is.

Chef, how did you pour off the beef fat? I was taught to render the fat, pour it off, then add the base vegs. Otherwise you pour off their sugars/flavors with the fat.

Thanks for watching! There wasn't a lot of fat in this beef. I usually take the fat out after it has cooked then add the seasonings, good point on losing the sugars from the mirepoix, that theory ruins decades of cooking methods.

The Ls are silent in the maillard reaction. You should know better than to use cornstarch! It will not reheat the same ever again without adding more when reheated. This is why Chinese food does not reheat well especially soups because they are all corn starch thickened so they have odd little tiny balls in them no matter how hot you get it.

+Polkadot Panties i have heard it pronounced 3 different ways during my life, never questioned it, as long as it's theory and method was correct. And I knew what it meant on the written test. I am glad you pointed it out. I checked on Google, it is apparently it is pronounced "Mayard". One of the issues with being self taught as well. No teacher.
