If you are looking for the printing pattern, you can use any rendering progarm and assign the pattern on it. If you want physical pattern laser cut, grasshopp may be a good fit.

really! any surface should have control points to edit. make sure use command PointOn if you are in older version than Rhino 7

How do you make the line for the handle straight up? When I am trying to draw it, the line is going everywhere except up though I am drawing it in the correct view.

disable the Osnap may help not going everywhere

When I rebuild using the same point count settings, the shape gets pretty severeley mis shapened?

it is because the control point has been evenly out.

if you cannot turn on control point from surface. it is a polysurface. Points cannot be turn on on poly surface. suggest to rebuild your curve into a degree 3 single curve. then build surface from it.

this model is intend for sketch model. there are other software for creating pattern for soft goods.

you could. use combination of CreateUV Curve and Flow Along Surface. However, it maybe deform on some tighter area. If you need pattern like repeating logo, I will suggest to do in rendering instead of model itself.
