I will may give you an answer in bad english because i m french and i don't know how to say it... So that's exactly pâte à berlingot (berlingot paste/dough?), "Berlingot" is an old kind of candy that we have in France. It's made with glucose syrup mixed with sugar and lemon juice (and some flavour and color), you bake it at ~140 degrees and you have a kind of caramel. After that, you need a kind special table ceramic or inox (it must be cold, because from the point it's baked sugar, it's very hot and it will melt at anytime if it's not cold.) finally, you stretch it and you have to do like in the video. The recipe is on the net you just need to put on the search bars these words "pâte à Berlingots", I tried myself (oh you need a sugar thermometer) but it was a great fail... The baked sugar never stopped melting because my table wasn't cold (it must be a refrigerate table) even if i stretched it... I hope I help you! Greetings from East France!
