Well, is better in many ways, the finishing for exemple of geneva stripes is more smooth and finer than any modern Jager lecoultre

When pickling the silver so it goes white after time, does it harden like steel? Because I think a ring or wrist bangle that has been pickled white would be gorgeous

So I believe the process is heat to oxidise black, pickle, heat again - black starts to change, pickle, heat again - starts transition to white. and keep repeating the process.

No, the white layer is a very thin and rather delicate layer of fine silver on the surface. The pickling merely extracts copper from the silver, adding to the brittleness/fragility of the silver layer. It will wear over time when exposed to surface contact/rubbing. But it is fairly tarnish resistant however.
