I remember being in 5th grade at an Evangelical Lutheran school and my teacher/principal straight up went on a tangent about how "Happy Holidays" is the devil trying to work through the public by making Jesus' birth obsolete. I'm not even joking; he spent well over half an hour "educating" us on how "Happy Holidays" is a sin, and how he goes out of his way to correct store employees for trying to take away the true meaning of Christmas. Now that I'm adult, imagine how amused I was to realize Jesus wasn't even fucking born in December, it's just the date that Pope Julias I decided would work because of the winter solstice and other religions having their own celebrations during that time period.

I think "Happy Holidays" just makes more sense mathematically; rather than wishing someone well on a single day, you can wish them well for the whole holiday season. Maybe you only celebrate Christmas, but there's no reason you can't have a lucky day or two during Hanukah or on Boxing Day or on New Year's Eve, or whatever else.
