Connecting to your domain should not take that long. You may way to reach out to google or to your domain name provider.

Is it possible to have a page on Google sites that would link out to a different website rather than have it's own page. Like I want the icon to be at the top of the navigation bar with my other pages, but don't actually want it to have a physical page (as I want it to be a link out). Does that make sense?

yes. When you select the add new page option, you can select add new link. This will add it to your menu like a page, but it is a link instead.
