An MC being a prodigy is nothing new and it doesn't negate your work, just means you learn faster. And Ichigo's training wasn't really something special, he learned a fake bankai in three days but it is stated that Urahara also learned that way in three days, Sasakibe learned his in a month and Kenpachi learned in one single fight lol. Ten years is what it usually takes to MASTER a bankai, not to release it. Thats why most of this bankais have crazy drawbacks or are very weak in the beginning.

Yuno quickly mastered essentially every ability he was tasked with mastering. On the other hand, Asta was always the last one to figure out to do basic things, like fly on a broom (or his sword in his case). Everyone else has a 15 year head start on working on their abilities and magic power. Even after Asta was given Anti-Magic he was still one of the weakest people in the verse for the first 70 episodes or so and couldn't do much without support from his teammates.

First of all since Asta doesn’t naturally have anti magic he had to learn how to have it flow through his body naturally the same way mama does. Something that everyone else was born with. And it’s not like he can just snap his fingers and make magic useless. Against stronger characters it’s has been shown time after time that anti magic is pretty useless especially when characters can just augment their physical strength to match astas with mana. He’s had to train consistently to become proficient with his sword. For reference liebe the anti magic demon fought Asta and Asta destroyed him without magic or anti magic just a sword. Against vetto Asta needed help from Vanessa and finral to even hit him and still couldn’t finish him before yami can in and one shot him effortlessly. Hell even Noelle did more damage. In the elf arc in his black form he was consistently outclassed and outperformed and was essentially only used as a finisher. Anti magic itself kind of sucks it’s astas training to adapt it into better more functional ways of usage that makes it strong

He trained more and learnt to use the quirk at 10%(I think). He shoot up to 20% because he had to train harder in a short amount of time otherwise he’ll be left behind and die soon. He trained through MHA’s hero events, trips, mentors, and teachers. It’s a freakin roller coaster. Since he already had a firm grip of his quirk through physical training it was easier to rise up quickly.

Remember that the entire time, Luffy is constantly working to become the strongest despite his relatively weak df ability. Gear 5 is no exception, it is the logical progression of a df awakening, it enhanced what he could already do and let him alter his surroundings (like what doflamingo and katakuri did with their awakened dfs), it just has some extra pizazz and a fancy name. Without the kind of person Luffy is, it would be impossible to master and awaken the df, he did work hard for gear 5, and it was no surprise to me when it happened (other than the aforementioned extra pizazz, that was kinda a curveball.)
