Some pointers on hiding. Use outfits that actually blend in with NPCs. Like dress up like them. Not in some highlife DLC clothing. Dock worker? Stay near that area of dock workers and construction. Blend in and don’t give yourself away. It’s more fun seeing you troll them with your disguises than just running. HIDE and SEEK. This is just what I would do.

A suggestion for the grande time. The catcher can say when they want a Grenades to be thrown than just trying to throw the grands every 3min. The 3min can be a cooldown for each grands to be save. (How many grands can be saved can be discussed between the catcher and runner)

1.5 I don't mind the pauses at all, they just need a little touch up like a pause symbol in the middle of the screen and maybe even add some grey to frame you've "paused" on. I would say try and also keep the pauses to a minimum so it doesn't make the video feel like it loses pace but I do very much like hearing the details on your thoughts during the game. Hope this helps! Edit: I also think you should swap out the Sniper Rifle for the Pump Shotgun, I feel like it could make the defense a little more interesting as you'll need to be closer to get a kill and it still gives the seekers a chance to get you.
