you can cut all your times down by freezing the food on the trays first. i noticed it’s about 7-8 hours saved.
I am a newbie and I am wondering where the extra hours come from ? From your sheet, apples 9 hours freezing, 7 hours drying, then you have the total hours as 24 -28 hours.. 9 + 7 = 16 hours??? Thank you.

I am a newbie too. I'm on my first batch as I type. I was wondering the same thing but I found the answer down below. You have the freeze time which is the first cycle and the dry time which is the third cycle. There are three cycles all together. The machine has a separate second cycle that we do not pre determine. So if you set the freeze time and the dry time to the chart, you can expect the total dry time to be what it says because of the added second cycle that the machine does on its own. Does this make sense?

i have a question. in the middle of a cycle and the temperature reads 130 degrees and says high room temp. is this normal? or can i cancel the cycle its just a bread run but not sure if i can stop the cycle just like that or if the temp matters

Thanks, I pushed pause and wrote out all the times ,thanks! I couldn’t read the last little bit some words popped up on the screen. Also could you make a list of how long it takes to rehydrate foods. Just got my freeze dryer and looking forward to freeze drying LOTS of different foods and treats

This list is way outdated and not needed any longer. Cycle times are much shorter now and the software is intuitive

@@thefreezedryingcommunity where/how do you know what to put your self temperature at? It doesn't say anywhere online or even on harvest rights page ..I read they use to be 125f stock but now they are 55f...I'm wanting to freeze dry ice cream and also skittles

Third batch here with my new XL 7 tray FD. Freezing a batch of cooked chicken and cooked quarter pound burgers. Trays and food were pre frozen. I am at about 31 hours dry time, -1 or 0 degree and 179 mtorrs. I am curious as to if it should be warmer or more specifically what temp should I expect for the end of the drying process? Thanks for any help.

Sounds like you are right on track. Just let it finish up and add more time if they aren't fully dried. I'd say 38-42 to be on the safe side.

Just wondering are we suppose to set the freeze time to 9 or 8 or what ever it maybe each time? I’m trying to wrap my head around all this I’m a newbie and I just got my new med and the first two times it didn’t work out then I had to get an update it running now so far good, but I didn’t change the freeze time not even sure how at this point.. it’s 8:10 pm Sunday 8/13/23 from NH

This video is an old one. You do not have to adjust these settings on the newer freeze dryers. Happy Freeze Drying!

How about hot sauce (homemade raw fermented hot sauce) ? Have you freeze dried hot sauce before? Would you reccommend a custom setting due to high salt content and by extension lower required freeze temp for the liquid? Thanks!

Oh i just realized the custom setting only allows adjusting the temp of the tray warming, not the actual chamber freeze temp.

I tend to do cooked, but either can be done. Just make sure that if you are doing raw, that you label them that way. It's very easy to forget. Meat turns out well rehydrated. I am doing an all meat video soon.

I haven't gotten my FD yet but when you say for instance 9 hrs freeze and 7 hrs dry why is the total dry time 24-28? You dont just add up the 9 plus 7? where do the extra hrs come from? There must be a reason i'm just a newbe :)

This video was made before the new software. There are 3 cycles....freezing, drying and final dry. You can only control the final dry time on the new software.

I am freezing sweet potatoes and it is already into 40 hours and has not yet gone to final dry. Although the temp is about -24, the mTorr is right about 850. I think something is wrong, but don't know what. Can you help?

you dont have a good seal. mTorr should be below 500. check you seal. Also check your drain valve, if not closed all the way it may be sucking air in

There are 3 cycles. You can change the 1st and 3rd. The 2nd cycle is determined by the machine and the pressure in the chamber.

Hello I have been watching your channel for awhile now. I purchased a small harvest right machine. I've had it for 2 weeks and am still trying to get mine going. I had to do a off gassing process and i am right at this moment trying a new batch. I passed 2 functional tests and I am in the vacuum freezing atm. I have a question . During the vacuum freeze the mtorres dropped below 500..to 482 but now they are rising again. Is this normal for them to fluctuate..i just don't know, I wish they had a more detailed book on what you should expect. I'm not on facebook or rumble so I was hoping you could answer this one question Thank You... Bonnie In Canada

Yes, they will jump up and down. Its easy to have newbie anxiety on a new appliance, but its best just to let the machine do its thing.

When you say do it’s thing, what does that mean?? We purchased ours last week and have watched many videos, but all are old machines so with the new ones, does is self-regulate? I froze strawberries overnight and am getting ready to load them but I’m not sure if these drying times will work. We’ve already thrown out 4 bunches of bananas and 4 pineapples.

@@lindaoldroydellsworth5824 if your machine is new, leave it alone until the cycle is done. You should not have to pay attention to mtorr, time etc. Its done when its done

My Freeze dryer is only 2 months old……and it was not working at all……I have been troubleshooting vacuum leak issues with the tech at Harvest Right….we tested all the areas where leakage would be….He had me take the back and top off the machine. The solution was to put silicone in the area where there are 4 wires going into the drum ….this area is in the back top of the drum…..i removed a while disk near the wires and the silicone was put right in there……the technician, his name is Louis, was very knowledgeable, and i had about 4 or 5 sessions/appointments with him over the phone…..the silicone worked, and i am now Freeze drying without any problems!!!!! You need to talk with the technicians….they really want to help you…….they should put silicone on this part that i am talking about on all their machines!!!!!

What is the longest time you have had to wait for a batch to complete the process? I am at 50 hours for my first batch of raw meat, (minched pork and pork chops) and it is still working, but probably have prolonged process time given my location. 90-100F in day time.

If you did not prefreeze your batch, that is usually the first 8-10 hours. If the meat is thick it will take awhile. I think my longest cycle was 60 something.

When you freeze dry the most important part is temperature not timing... I’ve never seen anyone mention the different shelf temps for different foods !!

I know this video is old, but I am having trouble with drying times, hence the reason for me to take my time to find information. I see you replied after quite a few people asked, that the info is obsolete due to the machines now. My next question would be, do you have an updated chart? Either I think my food is perfect, only to find out I was wrong, and REALLY wrong, finding it still has wet spots that show up later, or it is so powdery that its almost unidentifiable. I can't seem to get that happy medium. I have now started putting food in food saver bags before I put them up in mylar just to make sure that its ok for long term. I don't want to have shtf later and find out the hard way that my food is going to be what kills me. So, since there has been several requests, and maybe I missed it since I am fairly new, but could you update the drying times list please?

There are too many variables for an accurate sheet. The machine is pretty good at correctly measuring whether the food is done. If in doubt add time. Food saver bags will not store your long term food properly. They will allow light into the bag and will seep oxygen over time.

I do not have any first hand experience with the scientific model. However, if it is similar to the residential model, you can go to customize and adjust cycle times. Hope this helps!

I’m so fucking confused.... how is it only 9 hours FD time and 7 hours DRY TIME but the batch time is 30-40 hours?!?!, what part of the process is automatically continued? I’m not understanding at all. like if it’s not finished, what does the machine automatically repeat itself until it’s finished, what steps?!?!?!,!
